My husband and I were married 60 years last October. His mother was a great southern cook and everyone always asked her to cook. The first year I couldn’t please him with my cooking so while he was on tour I watched her cook all his favorites. Creamed corn cut off and fried gently slow. Did that with all his favorites. Fast forward the first time I fix her corn, plum cake, potato salad and many more he would say, Hon taste just like Ma’s. He passed last year and a month before I fixed her plum cake. He called our daughter and said, Your mom outdid herself with this plum cake, it taste just like ma’s. I can’t tell you how much I thanked his mother for letting me watch her. Wish I could fix it again for him now.

Southern food was foreign to me until I started watching your channel. Having my immediate family coming from Germany I know how important family recipes are. My sister had all our recipes but she suffered a massive stroke and was put away by her son and all our food history is gone! I have a big heart for you. ❤

My Granny made the sauerkraut salad with chopped unpeeled apple instead of the onion and green pepper. She called it winter salad and made it when fresh vegetables are usually more expensive. I haven't thought of it for a long time. Precious memories.

Hi Mel! I love watching your videos! I loved what you said about the family recipes. My daughter has started making some of my grandmother’s recipes. My grandma used to make sweet pickles out of dill pickles and my daughter makes these every year for Thanksgiving. She started five years ago when she was 15. On Memorial Day she made my grandma’s pound cake recipe and it was wonderful! Of course we topped it with fresh strawberries and whipped cream. I’m going to have to make that Crack Pasta Salad because it looks delicious. Thank you!

Oh Mel , all of these salads look great !! And I’m with you on the price of the already cut Rotisserie Chicken … but I feel the price isn’t as bad if I figure in paying for the bones and the dark meat many don’t like ! I like the whole chicken , but buying it already pulled off the bone and all white seems like a win also !! I heard you mention milk and cornbread and I remembered when I was growing up I would fix cornbread and buttermilk for my sisters and I on Saturday afternoons and it was delicious. Sometimes I made what my Grandmother called “ flour” bread and spread grape jelly on it . That too was delicious 😋

Growing red leaf and butter crunch in our garden makes me eat salad 5 times a week. These are new to me, I might try some. I like to blanch broccoli and cauliflower before adding them. I like the edge take off the “raw.”

Sauerkraut salad has been a potluck must for our summer gatherings. I use white vinegar instead of apple cider vinegar. I also never added the celery. I can't wait to try your version of it. I love to top my hot dogs and brats with it. Thanks for the great salad ideas.

I make that same cornbread salad. So good! Most of the time I cook some bacon, chop it and add it in. Takes it to a whole new level. I am going to add that Snickers salad to my July 4th picnic menu. I bet it is amazing. Hope you had a great weekend and God bless!

Hi Mel! I love to take something light for work lunches. If I take something heavy, all I want to do after eating is take a nap. Lol! I think most of these would be great to take for lunch. And everything looks absolutely delicious. As all your recipes do. I think I'll be trying the crack pasta salad and the chicken Caesar pasta salad first .I'm thinking I would need the lettuce out and mix it in the morning before taking it to work. Not sure how that will work but I know it would be several lunches for me and I wouldn't want the lettuce to get soggy. The kraut salad is intriguing. I'm not a kraut fan but after seeing the recipe and hearing you describe it, I may just give it a try. I doubt the cornbread salad would hold up for several days for my lunches but it would be perfect for a picnic or barbeque. I know the apple and snicker salad is going to be delicious! I am the same after a big meal LOL And for sure leave the Caesar salad deconstructed, I have eaten leftovers one day later and they were ok but that's about the limit on it. Well, I'll tell u both the diabetics secret: when u have 5 grams of fiber or more, u can subtract it from the carb count. Fiber makes the blood sugar surge go much slower, so eat all the beans & fiber u want! I love beans, and it makes me giggle what they do to me after! My brothers were always upset to have the effect so they would walk thru a room & "crop dust it" which means silent emissions as they go. I just laugh my head off thinking of them saying "um wait a minute before u go into that room ok?!" 🤭🤣🤣🤣

@@InTheKitchenWithMommaMel If u look at a can of beans, it's like 8mg of fiber for a serving of 30 carbs, so subtract the fiber & u only have 22mg of net carbs. (Just a hypothetical.) That's the part that's so good for us. Beans & rice is actually one of the best combos for a balanced meal. Yum!!

Mamma Mel I know that you like Kraft salad dressings. But try the Caesar dressing from the Olive garden it has the right amount of garlic flavor it is delicious where did you get the rotisserie chicken.

Oh I like the Olive Garden dressings too, I've not met many dressings I don't like 🤣 And I get the pulled rotisserie chicken at Aldi and Walmart; it's back at the deli case with the prepackaged potato salads, etc.

I love salads and thank you for all these new ideas. FIrst, the sauerkraut salad is intriguing and while I was watching you make it, I thought about how that would taste with some diced corned beef and shredded Swiss cheese mixed in and make it like A Rueben salad. I would have to double it though, half for my vegetarian friends and the other half for my meat loving husband. :) And that cornbread salad brings back some memories. We had cornbread with just about every meal. Even breakfast with a little butter and syrup on top. And it made me remember my dad eating crumbled up cornbread with buttermilk in a bowl. I didn't like the buttermilk so he would fix me one with regular milk. Wonder if that was the first original cereal for old southerners. Your videos always bring back some wonderful memories of my younger years. Oh and anything with an apple in it, I consider healthy.

Oh honey, I wish I would tell you LOL They came from Sams Club quite a few years ago, and I check every year to see if they have this pattern back but they haven't so far. They do have a number of pretty designs every year, they come 5 to set with lids and they all have a rubber ring around the bottom that keeps them from slipping on the counter. And they were like $25 or $30, best money I've ever spent, I love them. Thank you for watching and I haven't had any trouble using them, just the normal wear of regular use. Of course I don't scoot them around on it, I try to lift and set them straight down. And I even checked with Lodge years ago when I got my first glass top and they said it was fine, just use care. I’ve got to get back on the salad train. I gained 4 pounds this week 😭😭 Time to get serious again. I’ve been slacking 🧐 lol I lost a close family member in April and having those recipes we love is so important. I make my great grandma’s coconut cake every Christmas and my great aunt’s cornbread dressing. And you’re right. We’re sad for us. We should be joyous for them because they are in a much better place.

Boy or boy do these all look so good! I grew up eating southern cooking and pinto beans and cornbread were a staple in our house. That kraut salad looks so strange to me but I may have to try it. I HATE green peppers to a point that I would throw up eating it. That little vegetable would have to be left out of my kraut salad.

I have my mother in laws Raw Apple cake recipe because I asked for it. I’m the only one that has it. I bring it to the family Thanksgiving dinner every year. That and jello on lettuce because that concoction was always on her table. It’s kind of a family joke, but I have nothing but fond memories of my time with her.

All of these salads look delicious! I have never had that cornbread salad, but I bet it is amazing. The last few times I bought that already pulled rotisserie chicken, it had big pieces of cartilage in it. I was very disappointed, because it costs so much. I will now be picking my own chicken and save that extra $3.00.

you can always buy a rotisserie chicken for $6--use the breast/white meat for the salads and freeze the dark meat (chopped small) to use for a chicken noodle soup--delicous...dts/usa

Mel, this was a really interesting episode + I never saw Cornbread Salad or tried it. That Sauerkraut Salad seems yummy too, but I'm not sure it would stay inside my salt restrictions. But the big question I have is: "WHAT IS CORNBREAD MILK?" I replayed that section, just to make sure that's what u said, but for the life of me, I never heard of it. So lmk what it is, ok? I just love to hear stories about ur kinfolk like the make-up u did with ur Aunt. Keep all that Appalachian history coming! Hope u have a wonderful 1st week of June sweet friend! I can remember my daddy and papaw eating leftover cornbread crumbled up in a glass of milk. It's yummy! But my Papaw ate his with buttermilk 😭 lol. I bet a whole group of people would run to the store for it! If I have some leftovers (or sometimes I find it already made & on clearance) I'll buy it & douse it with milk or half & half! Do u ever put vanilla flavor in ur coffee? I used to make Cream of Wheat for my daughter with Vanilla Creamer on it & a pat of butter. SO DELISH & she never realized it was full of iron & vitamins. U & ur kin are so creative, u have me amazed! I know the hot humid Summer is coming, but Praise the Lord, I have an ancient oak tree that stands tall & her limbs cover my whole house! Last Summer I didn't need AC, so much electric costs were tiny! The tree trunk is about 20ft if u put a tape measure all the way around. Oh also, little factoid - Great Sequoia trees love Michigan weather so people are planting them here now! We'll never appreciate their beauty but our great grandkids might. 🌳🏠🌲❤️
