I am surprised that designers haven't explored utilizing other styles of painting aesthetics in their games. I would love to see a game done in the Cubist style, or a platformer with visuals influenced by impressionist paintings; or perhaps a horror-survival game inspired by the macabre illustrations of Edward Gorey, or maybe even a RPG that referenced the opulent style of the Art Deco period in its character designs. I think that even a game concept based on prehistoric cave art would be amazing. Humanity has been creating works, schools and styles of art for hundreds of thousands of years, it would be great if mainstream videogame developers would broaden their horizons and became more experimental in their artistic direction, like how many of the indie devs are doing.

it goes down to a simple thing, similar to the 2D VS 3D animation problem, high risk and low reward. but it is also because of other smaller but important problems, Firstly when an indie developer sets on making a game, they usually want to make the best game possible a unique game that doesn't exist yet and offers a unique experience, therefore they put their heart into it, but when a big company sets up to make a game, they want to make the most successful game possible, a game like everything else out there that people already love, and so they put their money into it hopping it gives more money.

That's a bit of a harder one to place. It's definitely based in realism, but what they do with the violence (especially during the fatalities) is so over-the-top that it tricks you into thinking, "No. This is way more stylized than it actually is."

Fatalities aside though, are you saying it's basically stylized realism? I don't think they are going for photorealism, per se. If I was trying to describe that particular art style to an artist (for a game I am working on), how would I go about it?

You would describe it as Mortal Kombat. I know that's not quite the answer you were looking for, but after 3 years of working with my own resident artist, when you're going for a particular look, it's best just to point to the source that inspired you.

Ah, yes, the anime-style JRPG. Just recently picked up Tales of Hearts R on the Vita, and it's turned a $200 mistake into a fortuitous purchase. Excellent game so far, and it looks just plain incredible. Oh, by the way, I think the Top 8 Birds link might be broken. I clicked the link and said no video found.

Having grown up in the days before games even had video, and having experienced the transition from Zork, through the arcade giants, to what we have today... I don't know if I have a "favorite" style. Photorealism is great for space games, or anywhere the world has to take center stage. Other styles can work in various genres depending on how they are implemented. But I have zero use for pixel art. I genuinely find it repulsive. I did my time with Mario and Contra, I don't need to relive those days.

+Rift Dragon Muramasa: The Demon Blade. It's an action RPG for the Wii made by Vanillaware. There was also a remake released for the Vita, but it's in Japanese. Last I checked, you can find a used copy of either version for about $16, which is a steal in my opinion.
