Love it! I basically make them the same way. However, instead of the dill, celery seed etc, I add garlic, oregano, and a jalapeno.

Right? In the old days it was more common to have carrots of all colors. I have also observed that purple varieties of everything I have tested so far seem capable of taking the heat much more!

@ I haven’t seen a purple carrot in our at stores. I asked my sister we do have it. Only from a Farmers Market or any Choice Fresh Store.. Aue I’m only finding out. I love purple cabbage, cauliflower and onion! Can’t wait to try the carrot and now I learned it can handle heat🙂

I've never pickled anything before, so it's fascinating to see how it's done! Do you use the carrot greens for anything? I grew carrots for the first time last year and the greens were so beautiful I hated to throw them out. I googled to find out if they were edible and they are! One thing you can make with them is pesto sauce, so I tried it and OH MY WORD it's SOOO GOOOOOD! Usually I'm a basil pesto girl but the carrot greens pesto had a brightness to it that was so refreshing. I'm growing carrots again this year, letting them winter over and I'm almost looking forward to getting the greens in the spring as much as the carrots themselves. XD

OMG! Yes! I tried the same thing but unfortunately I included the tough sprigs, as well, so the pesto turned out a bit…. “Woody.” 😂 I am still learning the art of WHEN to harvest, so I imagine that makes a big difference. 🥕 Thank you for sharing - more people should know they can eat the greens!

Those look like Cosmic Purple carrots. They are so pretty! The only carrots I’ve grown that are darker, are the Black Nebula.

My skate coach puts a wet paper towel down next to the onion to keep from tearing up. She SWEARS by it. I wear contacts so I don't have to worry.

@@HappyHobbitthe flame can help draw the chemical in the onion away from reaching your eyes, keep the candle close to the onion as you cut it

Next time you cut an onion, don't cut all the way through the roots. They are less likely to make you cry.
