As a mexican and as a tapatio (from Guadalajara) i can tell that this recipe is very good, you just need to try with birote (typical Guadalajara's bread) because is not the same birote than bolillo, the birote is harder and its the perfect type of bread to drow in salsa. And try to not cut it in total half, leave some space so when you drown the torta, the meat is not going to come out.

You don't need to stop deep frying. Just use Avocado oil, Beef Tallow, or Coconut oil. But def don't use seed oils.

No it’s not the authentic roll in GDL where the ahogada is from it’s a special type of bollillo native to there just fyi
