I have tried few recipes of this bake. This recipe yields the best result so far, spongy and well textured. Exactly like the traditional one I know of. The surface of the cake looks great and smooth. Not cracked. Thank you for sharing.

Honeycomb cake is originated and still very popular in Vietnam, so may i suggest you watch the VN version and some even explain the tricks

First bake with bottom heat for 20 minutes then switch to top heat and bake for another 20 minutes

Plain flour is All purpose flour, maybe you could try to use Cake flour. Yes i lined mine with parchment paper.

It is a good recipe. I let it rest in the mould for an hour and bake. The reason is I don't want to break the air pockets. The result of the honeycomb is because of the air pockets created by the baking soda.
