I'm gonna try using the steam! Thanks for the tips, I'm constantly looking online for small tips for brown bread. I moved to Colorado, USA from the east coast and I still haven't mastered baking brown bread here, because of the higher elevation. My scones are great, but my brown bread is alway too dense and the outside cooks too quick. I've tried in a le crousette pot, which helps. I use wheat bran and white flour (1:2), wondering if I should add change up the ratio. Thanks again!

Mixing ingredients now. Using Odlums course flour. I’m swapping Kefir for buttermilk. I ferment Kefir at home using whole milk and kefir grains. It’s acid enough to lift the soda.

I ordered Odlums coarse wholemeal flour. I am gluten intolerant in US but over there I can eat this Was hoping to make soda bread with it but I prob can’t have the other flour you used. Are there any recipes you can refer me to using only the coarse wholemeal?

You can make this using just wholemeal. You might want to add a drop more buttermilk though 😊☘️

Can you explain why you need to put a tray on top? I’ve never seen this done before or the need for steam in making soda bread. New one on me!

@@francismcdonnell753 Because I’m steaming it. I want to trap the steam around the bread and I want to prevent the top from browning and crusting over to quickly at such a high temperature. This is something I normally do with sourdough bread. I thought I’d try it here and it worked fine ☘️

@irishbakerabroad thanks for your reaction, much appreciated. I usually use 350grams whole wheat, 150 grams white flour and 100gram of oats and its not as dark as the dark brown bread that I have bought in Ireland. Its like a rich chocolate colour.

Lovely. That butterin' and dipping bread must be cultural. My husband does not eat that way, and can't relate to dipping bread into a soup or stew. I could eat like that almost every day of my life!
