…and thank you! The soup is AMAZING! We’ve made it a few times now. Highly recommended. If you make it, just cut the leeks differently than Cheryl did and cut them length wise. She definitely made more work for herself doing it that way.

It is SUPER YUMMY! Not many ingredients, but it is packed full of flavor. Although it isn’t really traditional, the next time we want to try it with come carrots in it as well. The best way to clean leeks is to Cut in half lengthwise, then into size pieces you desire. Place in a bowl of water to separate the layers. Then and this is the crucial part, lift the leeks out into another bowl being careful to leave the dirt and grit in the bottom of the first one continue doing this until there's no more grit. Do not pour the water off while your leeks are in the bowl, this allows the grit you just removed to resettle on the leeks as it passes by them. My great aunts and grandmothers taught me that, 😆 usually interspersed with disparaging remarks about " those nonScots " pretending to know how real Scots cook good food.

Thank you. I did try to explain that to Cheryl but she already started doing it the other way and kinda learned the hard way. LOL We did make sure to wash it several times and used a strainer to get all the dirt. For a soup that has so few ingredients, the flavor is amazing. Thanks so much for the tips and for watching! 👍 🏴

It’s Reaallyy good! I bet it is. 😋 One time we were reading through old letters that Glens grandparents had saved and I kid you not some distant relative said she thought they were related to Robbie Burns. No, we aren’t related, but we had a bit of a chuckle when we read through those old letters. I love this kind of historic/ancestral highlight video. I'd never heard of this soup before, but I'm going to try it now. I do have some Scottish ancestry, and my husband is half Irish, so it's always interesting to learn something new. :)

@@CelticRootsFarm We've tried a few Irish recipes so far. Shepard's Pie and Colcannon. There are a few desserts I want to try, Irish shortbread and Treacle Pudding this month. I don't know much about traditional Scottish food other than Haggis, and now Cockaleekie soup. I'll have to do some research. :)

OHHHHHHHH that looks so good! That would fit the bill today. We have been without power since about 12 midnight. Tens of thousands without power here in NY. But, we have a generator, pellet stove that runs off a marine battery, and a outdoor gas grill. We are luckier than most. It warmed me up just watching you make the soup lol. My dad was Italian, mother Scotch-Irish with a touch of Welsh. I think I might have had a soup like that when I was growing up with rice. My dad used those tiny round pasta...can't remember the name. Or very similar to it. Enjoyed! Take care!
