It seem different from japanese, once the koji colonized the beans they added salt and ready for fermentation, taiwanese soy sauce they wash away the green koji mold, maybe its not edible koji because it is green. The japanese i think is white koji.

Fell in love with the process. Very dedicated owner for producing authentic soy sauce. Even bottling and labeling is done manually. Just amazing

Yeah, soy sauce made by traditional way is worth the payment, unfortunately, in now days, most of it you see in super market is made of some chemical substances, and restaurants love those chemical soy sauce, too.

You know when they do to show in public all over the worlds they do clean ok ,but they do no show is dirty I have one friend she told me that the noodles don't eat very often because is not clean they not wash the machine process the noodles is very dirty she told me she is their peoples even the soy sauce and msg not clean at all she said that.

I am utterly amazed at the lengths it takes to produce black bean sauce. It seems such a long and drawn out process, with so many stages and fermentation processes. But what I would like to know is, how was this process discovered ? Was it deliberately created through trial and error or accidentally discovered after sea water contaminated a jar of beans ? A very intriguing creation.

I was thinking the same- how did someone think “Let’s take soy beans and this yeast, ferment them, then salt it and leave it for a good long time, then drain it, and it ends up with this salty brown stuff that tastes horrible on its own, but does amazing things to food.”

The process from start to finish is very labor intensive ( and back breaking ! ) But when you see the work and care that goes in, you just know that soy sauce in going to be great. It made me hungry just watching. Wonder if you can buy this hand produced soy sauce in the United States ?

That looks absolutely fantastic! Fascinating to watch the process! The sushi and pork belly at the end looks really good too!! But... I have to admit I'm more than just a little concerned about the big giant cracks in the ceramic pot that's been fixed with silicone caulk! We can only hope the sheer amount of salt & cooking will kill any bacteria from those cracks!
