A tip for removing the membrane is roll the ribs up tight with the membrane on the outside. This helps stretch the membrane to. Then grab the end and pull as you un roll the ribs. It works great.

Used these techniques and recommendations with a few swap outs of my own seasonings and these were the best ribs I’ve ever had in my life! Very first thing I’ve cooked on my Traeger and it was a complete success. Loved the tips about the visual cues versus the temps. Had I gone off temps alone, I feel like I would have overcooked it. Thanks again and this was VERY useful.

Just got my Traeger a couple of weeks ago. Have mostly used it for smoking jerky, and maybe a steak or two...and that has been fantastic! I've never tried to use a smoker for anything other than that. But today I decided to use the recipe you show in this video. I followed the steps just like you showed them....and the ribs turned out to be spectacular! I have much more confidence in using the Traeger now. I really wasn't sure what the deal was with the brown sugar, butter and some honey. But when we opend the tin foil it was like a revelation! You could smell the ribs, you could taste the syrupy goodness of the liquid in the bottom of the tin-foil. My family was extremely pleased with everything. Can't wait to see some of your other recipes! Really appreciate what you do for us rookies.

Amazing!! I'm brand new to smoking and this was only my 2nd time with the Traeger (my husband got this for me for Valentine's Day bc I had been eyeing it for over a year!) and I definitely nailed it with your help 💯💯. I made one small adjustment after the initial 2.5 hours at 275°, i DECREASED TO 250° for 1h 45m; the reason for this is bc when I pulled them off to wrap them, they were already starting to pull from the bone. End result -- the bones slipped right out of the meat, I had to hold and slice them very carefully; I would've preferred that "competition bite", but still, the flavor and consistency was incredible! When I followed this recipe exactly the bones would fall out the bottom of the rack when I took them out of the foil to sauce them. I emailed Matt and he was nice enough to write back to tell me to pull them at 207 degrees. My Traeger tends to run hotter than set temp, especially in the summer. So I did the first part for 2 hours, pulled them and wrapped them, put them back on for one hour, and then took off the foil and put them back on the grill where I sauced them and let them caramelize. When I put them on at the end I put in a temp probe and pulled at 207 and let them rest for ten minutes. They were perfect. So if you want to eat your ribs with a fork with the bones dropping out the bottom, go the full time indicated. If you want ribs that you can cut, pick up and eat, then keep them in the foil for only an hour.

@billg5297 Жыл бұрын
@@abyssus9304 You are welcome. I changed it up a little and the ribs have come out way better. I keep the initial cook the same at 2.5 hours, and then wrap them but only leave them in the foil for about an hour to an hour and 15 and then put them back on the grill and start saucing them so it will caramelize for the end of the cook. I put the probe in after I take them out of the foil and pull them at 207 and let them rest for 5-10 before cutting them. They stay on the bone but come right off when you take a bite. I think being wrapped for two hours kind of steams them and that makes them fall off the bone before you cut them. Much better!

I came here to say I tried this recipe today (using my own spice rub and in the wrapping step, instead of honey I used a smoked garlic hot sauce) 10/10 would recommend. You got a subscribe out of me

I really appreciated the information. Followed the information including the apple juice spritz. Even though I didn't have any Honey Hog rub or brown sugar, I had honey and some Kool Runnings spice which I substituted with. Really pleased with the way the ribs turned out. I will check out where to buy the Honey Hog rub in Ontario, Canada. Thx Matt...great channel.

It is real easy to overcook the ribs! 275*f for 4.5hrs.

Thanks Matt, I tried this recipe and found it to be a lot like eating candy, if you have a sweet tooth this is the recipe for you LOL. I took out the brown sugar and the honey and stuck with the butter and "for my taste buds" it was perfect.

Yeah it took me a while to get used to the sweetness even though I only used one thin line of honey and a little bit of brown sugar. I think next time I around I might just do one or the other. I wish I have the Honey Hog Hot, but I plan on getting it. I want a little kick into the ribs.

Used this recipe for the first time today. The only different was I allowed mine to cook a little longer at the end and added Bone Suckin’ Sauce. Turned out delicious.

I'm confused, why would you set it to 275? Why didn't you use the "smoke" setting for the first step?

If I may add, try using butcher paper instead of foil. You'll keep your bark and still have juicy ribs. Paper is porous so it lets that excess moisture out and doesn't steam them like foil. #ProTip

Question- What is the purpose of putting the ribs in foil and putting them back on the grill, vs putting them in the oven? Is the pellet flavor going to go thru the foil? I would rather save my pellets for future cooks.

I have another thing for you to try. Called The Grandma trick. Soak your ribs in buttermilk after u trim overnight. I usually add a little Tabasco sauce in my milk when soaking. Ur preference. Then season how u normally do. And cook how u normally cook. Enjoy. I do this with steak too. Works amazing.

1. 275 for 2.5 hours, meat side up. 2. Brown sugar, butter, and honey and seasoning in foil, meat side down.

What happened to the bbq sauce though?? Maybe add some bbq sauce 5-10 mins before taking them out.

We’re fully cooked in the first 2.5 hours. I have doubts my Traeger is showing correct temperature at 275.

Great recipe. Worked perfectly. Falls off the bone. Next time I’d pull it off 30 mins early and put back on the grill bone side down and let it crisp up for a nice bite. I like how it falls off the bone but I also like a good bite
