Yep, cooking the beans while they’re still in the can is genius to avoid lugging around heavy and bulky pots and pans, too bad it’s kind of a slow process on low heat to avoid catching the label on fire and subsequently tainting your own beans with whatever noxious fumes would be produced from the label burning up.

What a great video! Seeing the old Seaboard structures still in use brought a smile to my face. And you drove through parts of Florida the remind me of my youth there and what I loved about the State. Cooking, road trip, canal and dam history, and trains. This video had it all 🙂

Just a happy accident, but I was cooking a steak (ribeye, my favorite cut) when I stumbled on this episode. Seared in a cast iron pan and finished in a 500° oven. I was biting into my steak just about the time your supper was interrupted by the CSX train at Lochloosa. Excellent show as always, Danny. For some reason I didn't associate a barge canal with Florida, when I read the title. Like you, I learned something new. I initially thought you might have ranged far afield to the CSX, ex-Conrail, ex-Penn Central, nee-New York Central Mohawk Subdivision along the NYS Barge Canal. Of course, there would be no outdoor grilling of steaks there in the winter. You might lose the camp stove in a snow drift. PS. Rob is correct. Pepper after cooking.

You should check out some other infrastructure related to the unfinished barge canal near Fort McCoy on CR 316. There is a high-level bridge over the Ocklawaha River and surrounding woods. There is even a completed fender system under the bridge at the point where the canal was intended to pass under. Also, on the gulf coast near Inglis there is another completed section of canal and locks. US 19 (as opposed to SR 19 shown in the video) crosses the canal near the locks.

I'm glad that you are getting out and shooting these trains. Here in western Utah we still under a blanket of snow or just enough mud that might get your ride stuck. It wouldn't be fun being stranded trackside when the temperature drops below 30° f at night. Thank you for this combination video from two of your trips on the Florida S-Line in January and February 2023, Danny. You caught some nice manifest trains with a variety of freight cars on them. The B207 phosphate train to BNSF's Clyde Yard in Cicero, Illinois will either stay together to go out to some point on the BNSF in the agricultural areas of the Midwest or be broken down at Clyde Yard to go all over the MIdwest to be used to fertilize America's farmlands. Thank you for the information about the Cross-Florida Barge Canal. I had never heard of that project. I presume that the Cross-Florida Barge Canal was put forward in the Depression Era of the 1930s as a way of putting people to work.

There is a reason that everybody else wants to be like you Danny. Nobody else even comes close. "The master of the high iron". Nuff said. Mark McGowan is a retired SP and UP signalman in Tehachapi of all places. He will tell you straight up, he knows tracks, he don't know crap about running trains. Between you two, and what I learned 60 years ago in my REA days, I think that is a pretty good education. One Grampa was an REA agent, The other was a roofer. I was always packing freight, or packing shingles. But I miss them both greatly.
