Depends on why you are watching. You get little of the “hows” and none of the “whys”. There is a ton of bad videos with editing and commentary, but with good editing and thoughtful and limited commentary the video can fuller explain what is going on.

Manny's is a Chicago institution. Last time I went was in the 90's before I moved out of state. Glad to see they're sill there and apparently going strong. My order was always a brisket or corned beef sandwich with 2 potato pancakes. The best you'll get anywhere!

Based on most of your comments it looks like a lot of you need to know more about this family owned place; Manny's deli it's by now an institution in Chicago, the meat you see in the video it's corned beef and pastrami, not you traditional southern style smoked brisket, I know, bummer; but most of the food that you see on their menu is Jewish cuisine, like the "latke", or potato pancake that you must have if you ever visit this place, I can assure you the food is tasty, fresh, even though you see those briskets come out of a package because of all the demand that this place have, and I personally worked next to Vito, the guy slicing the meet and building the sandwiches, just like the place it self, he is an institution because of how long he's been there, greatest personality, full of energy and will definitely turn your day around, no joke, whenever I go back to Chicago, this is a place I always stop by

Many don't know but in addition to the corned beef and pastrami, Manny's also has the traditional Jewish oven baked/roasted brisket which is quite good.
Been eating at Mannys since 1995. That Matzo ball soup is top notch and the latke is the best I have had from anywhere. The corn beef and pastrami always have great flavor but they cut it thin with a deli slicer so depending how long it sits there it can dry out. I always get mine on the onion roll and then get a side of rye to take home. There is always enough meat for the addl. sandwich.

The old police Academy was just a hop, skip and a jump over the Dan Ryan X-way. Manny's was the treat for all the sweat from gym with the monsters like Clay! And, the pain, and the screaming. No crying allowed. Clay taught us a lot about body mechanics. Thanks, Clay.

He did that on purpose, thats the fat end of brisket, the slice makes it cook same rate as the thin end.

Clearly you know how cooking works and that a narrow piece of meat cooks faster than a thick one, so the purpose of the cut (which he did over and over to a depth of like 3 inches) is to facilitate an even boil? You think he accidentally cut into the thick end of the brisket to a depth of like 3 inches over and over again?

Spot I used to cook at back in the day, we'd get cases of those corned beef slabs & cook tons of them at once (after pickle brining for a few days) in this HUGE caldron with a propane burner out back. If there is a heaven, I surely know what it smells like.

Much respect. Ive only seen a triple lindy once in a movie back in the 80's. We saw it again at the 7:38 mark. These places are like dinosaurs in the making, and that's a shame. Many great hole in the walls back in the 80's, 90's and very early 2000's. Best food, best beer, and maybe 20 people max in the joint.
This reminds me of that Mitch Hedberg joke... "Would you like anything else with that?" -"Yeah, a loaf of bread and some other people!"

A friend and I went to Nickys on 115th Pulaski, Alsip Illinois. We ordered a couple gyros. Got home and both sandwiches were very light with gyro meat, you could see through the bottom of the pita. I called up the place, spoke with the manager. He said we weigh all our meat before putting it in the pita. I bitched him out. I told him you do the EYE TEST. You put enough meat until it looks fully packed. If not, you’ll lose business, like they did mine. Manny’s ain’t cheap packing it on.

I once travelled a lot. US and Australia serve twice as much as human needs for a meal - typically a huge steak resting on a mountain of potato chips. As the result, we see a lot of horizontally-huge body people limping around : )

Okay, so I'm from an area well know for our smoked brisket. Absolutely no disrespect to an established institution, but am I missing something? I saw them open the briskets, boil them, remove the fat caps and slice.. did I miss a seasoning step? Not to mention where I'm from, you smoke a brisket for a minimum of 8 to 12 hours which works to tenderize an otherwise very tough cut of meat. Does cross cutting it that thin really tenderize it enough? Just feel like it's missing a lot of smoke and fire. :P

Don't get me wrong people. This person is very good great at what they do and I'd love to eat there 7 days a week. But I would change one thing all that perfectly cooked and made to pick them up with that fork and put those big holes in them doesn't help the looks at all. It kinda a let down. When there's many tools that would pick them up and be just as fast.

The brisket is brined in seasoning, the name changes to Corned Beef. Very similar to Pastrami.😋

The brine contains salt, pickling spice (smoked black peppercorn, mustard seeds, bay leaf, allspice, coriander seed, cloves, red pepper flakes), brown sugar, and plenty of fresh garlic. It is literally submerged in the brine for a full week. It is removed from the brine, rinsed, placed in a pot of water with some more pickling spice and simmered for several hours. At this point it can be served, or chilled for later, but it should be eaten within a couple of days. It is a labor of love, and no one loves the brisket of beef more than Manny's.
