It's for bringing the temperature down and stop the cooking so the pasta won't be loosened and it is ok since this dish isn't pasta it's mac and cheese. The sauce itself is sticky enough it has a lot of cheese and it's hot so you don't need the sticky starch on the cooked pasta to absorb the normal sauce you make.

i used jalapenos, yellow bell peppers, onion, bacon bits and green chiles in mine, also tony chachere's seasoning and garlic salt...i cooked andouille sausage seperate, then it added to the macarni and cheese...it was good 🙂

It's called a roux.A very known sauce that many uses to make white spaghetti.

@@xxshippudenxx3371 lol Thank you, but I know what a roux is. I usually just make them from pan drippings and fond (cook in a bit of flour and add milk) instead of a big bag. Also, I never considered using it in mac and cheese. You learn something new every day.

T his is called a casserole. It is NOT Cajun macaroni and cheese and every family has their own recipe that uses different cheeses. We don’t put meat or vegetables in it! Just the cheese mixture. I’d never order this or any else “Cajun” unless it’s in the south actually, only if it’s in Louisiana. You won’t get the real thing elsewhere.
