I agree, always check out the choice selection first. The last time I went to Sams, the choice briskets looked better than the prime in terms of marbling. Good looking tri-tips!

Whutuup Fredrick! 👊😎 Aw man, that’s a good question! I prefer using 100% red-oak splits using the Santa Maria attachment. However when time is an issue I don’t mind using charcoal with a touch of red-oak, reverse seared like in the video so I can allow time for the red-oak to penetrate the tri-trip.

😂 good point! Sometimes I forget important info!! 😵💫 Indirect cooking @ 250F/275F til Tritips reach 100F internal. Sear @ highest temp possible with left over coals. Remove @ 130F internal. Rest 10 minutes!

You’re absolutely incorrect QM. Rewatch the beginning when they are in the pack and notice that both tritips grain run directly towards the elbow of the tritip. 😜 I sliced directly against the grain. Also at 7:32 you can clearly see the grains have been cut against rather than with. Anyone with a good eye will know that when cutting against the grain your meat has a bunch of ooooooooooooo’s and when you slice with the grain you get long strands. 😎👍

@The Mad Swine Backyard Barbeque the grain runs parallel with long end to the point , you clearly cut down with the grains along the big end to the point rather than across , is why the pieces were so long , no biggie , it's a real important step that you should go over in your video for newbies , most cut the tri tip into 2 pieces were the grains meet then slice across

Get off my nutz and my channel with that ignorant shit. When you’ve cut a few thousand tritips in your lifetime come back and leave a comment. I can cut a tritip from the elbow to the tips in one direction and ALL the slices will be perpendicular from the grain. I’m good like that!
