The winner looked like a dish called Blackened Chicken.You ,mix paprika,cayenne pepper,onion powder,garlic powder,thyme,oregano, and salt and pepper,about the amount in the bottom of a half closed palm of your hand each except half the salt and oregano.You seal up masala and chicken pieces in a plastic bag and shake,boneless chicken is easier.You cook in a frying pan with hot oil until it gets done and the spices toast on the chicken,then put on a plate and cover loosely about 10 minutes.It is served with a salad or cooked seasoned rice or noodles.You can also rub the chicken with oil and sprinkle masala over it,but the bag is more fun and makes it more even.lol.

We coat chicken with flour or breading when we fry our chicken. The reason for that is chicken lose a lot of moisture rather quickly than most meat. So the longer you cook it the more it becomes tough and hard to bite and chew. If you want to cook chicken without any breading, then roasting it or grilling is better. Just marinate it and brush it with oil to keep the moisture from escaping. That way, the meat stays juicy.

You seem to have missed that this was “broasting”, high pressure oil cooking. Even without a coating the pressure maintain moisture within the meat. But thanks for the smug comment.

Wow!! Tough judges!!! I wonder if they've tried chicken fried steak, mashed potatoes and brown gravy, with a buttered roll, and green beans? They seem to eat a lot of chicken, but do they fry beef that way too? All their plates looked good to me. Even boiled chicken spiceless can make a great sandwich with some mayo, tomato, and salt! Gee. Everybody loved it - and marking was TOUGH! I am just so glad the ladies got called in. I hope they get great pay. They get so few opportunities to try things, compared to men. I would love to see a set up kitchen for filming and give them opportunities to learn how to use modern equipment and learn recipes to take home for family to try.

They don't have modern equipment, a couple of them have mentioned not having electricity or gas in their homes. Teaching them to make a recipe on modern equipment wouldn't help them much.

Roti is the simplest type of bread that is made almost every day in every household. It is made with only 2 ingredients: wheat flour (atta) and water. Just mix them together until you find the right consistency. Make small balls and flatten them with a rolling pin. Put it in a pan and let it heat. You don't need anything else. To make paratha, just add oil (ghee).

Why aren't napkins or tissues ever on the table for them to clean themselves? Esp. when you're eating something messy, oily, etc. For safety and sanitary reasons, water and some sort of wipes should be on the table. Don't need anyone choking to death, hence the water.
