agreed. if i had one criticism of this show, it's that the producers could give much more accurate or thorough context on the different foods offered up to try. never thought about it this way before watching this show, but some foods might not "make sense" at first and could use a good explanation of what it is or why it is iconic or culturally significant to its origin.

As usual, Gul Sher Khan is correct... jerky is a perfect food for long journeys, hunting trips, and snacking because it does not require cooking and weighs very little. Also, it has been cooked- it's not raw.

It's definitely travel food, especially for long hikes. Lightweight, almost impossible for it to spoil, keeps you chewing for a long time, with an intense flavor, high in protein. But the salt! I think there are lower sodium versions, and definitely spicier ones like carne seca and sweet and spicy. I don't blame Raffique for thinking it's weird though. By the way, the word jerky comes from the native Andean Quechua word for it "ch'arki."

Yep that way it would have been cooked. They ate it dried when in a hurry or as a snack. But there are recipes where its rehydrate and cooked. Something like beef and gravy over biscuits.

Good Friday, gentlemen! It seems like Mr. Chaudhary has a hard time with anything that has a strong flavor, unless sweet. It can't be too sour, or now, too salty. Jack Link's is a good standby, but if someone can get them Sweet Baby Ray's, that's a much better-tasting brand, in my opinion, with better texture, too. We have a dehydrator and smoker. You smoke and dry the meat along with salt/ spices to keep it from going bad. Beef Jerky can keep without refrigeration for a long time. As others have said, this was common for cowboys, ranchers, and pioneers to eat as it is light and portable and won't spoil. Now Americans often eat this as a road trip item, snack, or when camping/ backpacking. I promise it is safe to eat! I am glad some enjoyed this item. Poor Chaudhary, he looked so devastated when trying the jerky.

I have made beef jerky and deer jerky. It is soaked in a brine-,which is why it is salty, The salt helps preserve it. The brine contains spices like pepper, sometimes hot peppers, salt, garlic, onion, and other spices, then it is put in a smoke house and smoked until it is dehydrated way down. It takes a lot of meat to make a small piece .Often a 1 cm piece in thickness will shrink down to about 3mm in thickness due to the dehydration. It was often used by First Nations tribes here in the U.S. and travelers in the pioneer days, because it kept so well as long as it did not get damp or wet. There are many flavors. Some are fairly tasteless, and some are smoky, hot, or sweet. Sugar or honey are often added, as well as some Japanese flavors such as Teriyaki. They also make turkey, fish, ostrich, alligator, and many other types of jerky. Depending on how long the dehydration process is continued, the jerky can be like chewing an old, hard dried out piece of leather, or can be moist and tender. A lot depends on which pieces of meat are used too.

@@2t573 it's prepared differently, so where as Jerky is generally dry-cured and cooked/smoked, biltong is cured in spices from raw meat, so biltong is generally thinner cut, more tender to chew and in my opinion anyway, has a more complex and interesting flavour

It's strange to me that in their culture, that jerky is such a foreign concept. Dried meats are such a common thing for so many indigenous cultures. I'm Native American and we've been doing jerky for thousands of years. Very curious to me that they find jerky to be something strange and unusual.

In the subcontinent before Islam arrived, Hinduism was the primary belief system for people for thousands of years, which is strictly vegetarian. So any process of preserving meats would not have happened. With islam (Abrahamic faith) in the 1500’s coming to South Asia this also brought a change in diet to include meat. So preparation of meats is only roughly 500 years old in this area.

Really quite cool how they realized the original intention of beef jerky. Cured and dried meat to use while traveling so you had something to snack on if needed.

They immediately knew it would make good food for a journey where you had little or nothing. It does the trick, keeps forever. That's exactly what it is and is for.

Chaudhary definitely has the most sensitive pallet. But he's such a good sport trying anything and everything they put in front of him. He's so sweet. Love them all! I want to see what they eat, please. I remember once Chaudhary cooked one of their favorite sandwiches. Maybe one of them could do that again?? Please. :)

5:11 I think he said "sirka", which means "vinegar". I think vinegar has tenderising properties and this is what he's alluding to the use of, not spices

I wish that the producers would give these brave and trusting men more information about what they are being fed. The story of jerky (or "Pemican") is a fascinating one, stretching back tens of thousands of years. Native American Plains-Indian tribes would "sun-dry" strips of fresh raw buffalo meat on racks to preserve the flesh for storage, journeys, war, and times of famine. Often salt, herbs, dried and ground-up berries (like pepper or juniper), and nightshades (wild onion, wild garlic, etc.) were used to help in preservation - thus the addictive flavor and texture. The finished Pemican could either be rehydrated and cooked, or simply eaten dry. It was often carried in a pouch for sustenance and snacking - and nearly every Native American carried one. Although most cultures in the world had some form of dried or smoked preserved meat (the Vikings dried Cod ["Luft-Fisk"], Germanic Tribes had "Landsjagger", East Asians ate dried squid strips and dried scallops, etc.) "Pemican" is the distinctly Native American version. It's a good story that these Tribal People deserved to hear before putting a strip of it in their trusting mouths.

I'm surprised that Raffique didn't enjoy the taste. I think he couldn't get past the idea of it being rotten. The fattier cuts aren't as tough and have more flavor. There are also ones with additional flavors.

In the olden days before fridges, it was common to salt and dry meats out to preserve them to eat while out on long journeys. Beef Jerkey is exactly that.

Yum! "Do people eat this?" Well, yeah, it's dried / preserved for long-term shelf-stable storage. So one can take it with you without worrying about spoilage. There's a long tradition of "preserving" meats as a protein source, either for travel or for putting it away for winter months, etc.

I tried to find out if this beef jerky halal or not, I found out according to the company site that before it was made in NZ an Australia and was halal but no more after a production change they removed the halal logo from the bags, and there are the ones made in Europe which they say it halal and have halal logo written on the back.

The producer should've explained to the reactors what beef jerky is and how it's produced. Why it's made that way and who eats them.

Rana got it right. It is a sort of beef chips, but not created by frying, but by very slow low temperature "baking" to drive all the moisture out.

Here in South Africa we have a version of jerky called biltong. It’s not just for travellers. We eat it all the time and love it. We make biltong from beef, venison and ostrich meat.
