Egg fried rice ideally should be made with yesterday's rice so it's a little dry. You want the grains to be separate. My family enjoys it when I cook the Nasi Goring (rice fried). I typically go for 50% basmati 50% grated cauliflower. The chief seasoning is sambal which is a Indonesian chili paste.

Serving it with sweet and sour sauce makes it even better! Rana is right about the ketchup for that, too! Basic sweet and sour is ketchup, water, brown sugar (jaggery works great; it's a lot like Chinese slab sugar), a splash of light soy sauce, and vinegar, with cornstarch to thicken. Nom! Though if you can use pineapple juice instead of water, it's truly amazing.
