My great, great grandparents settled in PA in the 1800s from Poland & Germany. My great aunt (who learned to cook from her Polish mother) made pierogis stuffed with potatoes, ground beef or pot cheese (similar to cottage cheese.) She also made dessert pierogis with fresh, wild strawberries covered in powdered sugar and served with sweet whipped cream. Those were some of the tastiest things I’ve ever eaten! Mmm

The collieries actively recruited from Poland around 1900. They were preferred over the Welsh as they were slightly cheaper and tended to work pretty hard. My Great Grandfather would have immigrated around 1896 age 15/16 by way of Canada and was employed in Glen Lyon about 250mi East of Pittsburg. In Pittsburg, Chicago, and Milwaukee people ask me for directions as if I look like I live there.

Poland had trade with Asia for pretty much all its existence. It's not that unlikely that some trader from Asia brought something similar back and it was a hit. Although that makes me wonder what the root of the word 'pieróg' means. Nobody said it so I'll do it this time: 'pierogi' is plural. The singular is 'pieróg'. Nobody ever cooks or eats just one so the singular rarely shows up in real life. That's why you'll see some commenters here write, "The pierogi are ..." without an 's'.

When you make Gyoza for them please make sure to do them the right way. Watch a video about them from Japan. Nothing worse than Gyoza the wrong way, because then they suck badly. Usually the old fashioned way would be after steaming to add some pork lard, but you can't do that, so use butter (the modern way) instead to get them crispy brownish/burnt slightly. The sauce is a mix of dark soy sauce, sesame oil, black vinegar and garlic. You can either mix that yourself or buy in a bottle. Dumpling sauce. But there are hundreds, so choose the one with the ingredients I mentioned.

However, the rest of us use forks when eating with the sour cream, as it's messy if you don't. They look like little kids making a mess. Please give them a fork so they can be kept clean. Even a napkin would help.

A large proportion of the population of the world eats with their fingers without "making a mess." These gentlemen and all their countrymen have eaten with their fingers from time immemorial. The world is not America and America is not the world. Perhaps you couldn't do it with grace and style, but they always do.
