It's never to early to start soaking your fruits in preparation for making your fruit cake for Christmas.
Christmas is not complete in Trinidad or the Caribbean without a Black Fruit Cake. This cake is soaked in Brandy and other spirits after it's done baking and while still hot to give it that delicious moist texture. I promise you this is way better than my other recipe and yes this recipe can be doubled. In this recipe I used up all of the pureed fruit in the cake.
1/4 cup raisins
1/4 cup cherries
1/4 cup prunes
1/4 cup mixed peel
1/4 cup cherry brandy
1/2 cup spiced rum or brandy
1/4 cup creme de cassis
1/4 cup white rum
---------
2 cups pureed fruit or all of the pureed fruit
1 cup soft unsalted butter or 2 sticks or 16 tbsp. or 1 block
1 1/4 cup sugar
3 large eggs
2 cups flour
2 tsp cinnamon
1 tsp nutmeg
1/2 cup Browning
Zest from 1 lime
Zest from 1 orange
2 tsp baking powder
2 tsp mixed essence

To soak the cake
1/2 cup Hennessey brandy or any dark rum of your choice
2 tbsp white rum
2 tbsp cherry brandy or crème de cassis

Made this cake yesterday. Had to be the first to taste it so i left enough after filling the large pan to place in 4 cupcake silicone molds. Girrrrrllllll this black cake is the 💣 ✔💯

You can make this cake without soaking the fruits. I steam them on the stove in some port (wine). After it's cooled, then I add the other alcohol like the rum etc. Steaming cuts down on the baking time too. Thanks for sharing another good video.

Hi Natasha. Love ur recipes. Quick question after u bake the cake is it necessary to soak it with the mix of rum or can I leave that step out and just serve the cake.

Four days of soaking? Girl great cake does not last that long without being cut in my family. Just smelling it baking makes people come around. Nice detailed video.

I'll be using this recipe to make my cake today, I soaked my fruits in cherry brandy, royal oak and puncheon, of course after I bake it I'll have to soak it so I won't be tasting it till the end of the week, can't wait.

Hi, it depends on the size pan, she has two recipes on KZbin, one recipe is suppose you give you two, the other gives five. I use the one for two, but the two that I get is the loaf pan size. I hope that's helpful 😎

Hi Natasha My question is, how do I achieve a cake with a flat top? Mine always comes out with a dome and after soaking it sinks a little bit. I saw on KZbin to wrap a damn towel around the pan when baking. Can you tell me if this works. Thanks and merry Christmas and blessed New Year

We have a similar cake in Colombia made with wine instead of rum but is nothing like the Trini black cake! My bff in Trinidad used to make a good one but kept her recipe to herself 🙄🤦🏼‍♀️ I'll try to make mine in 2 weeks hopefully it'll be as good as yours 🤗

Could u please clarify the measuring cup 2 said 2 cups of fruits but that measuring cups holds 2 cups and you use 2 of that measuring cups so in total you use 4 cups correct me if I am wrong thanks you have amazing recipes

Bajan Tad....these fruits last a very long time. As long as you keep them in a dark place tightly covered.

Bajan Tad: This recipe is for half a pound of cake.Natasha used 2 cups of fruits to half a pound of butter If you are making one pound of cake then you need to use at least 4 cups of the fruits to one pound of butter.

Boil the fruits with some water and spices. Let it cool, and put in a jar. I did mine like that, left it for a week, but you can use same day if you start in the morning. Just make sure the fruits have completely cooled down. You can’t add warm fruits to your cake mixture.

U can live it whole. But blending adds more moisture to the cake.

You can use a malts or non alcoholic wine.

It is good to make our traditional cakes with a a quality juice substitute and still enjoy a lovely cake. S Some people can not have alcohol and I like knowing what to use for those who can not.

You can soak / boil the fruits in orange juice....so you can do that the night before because the juice would go bad if you just soak for that length of time❣🇹🇹
