Hey guys! Please note I was using the word ‘cornmeal’ throughout the video when in fact I was actually supposed to be sayin yellow cornflour. Please note there is a big difference in texture and it’s actually corn flour not cornmeal that is required for this recipe. Most times we use words interchangeably when it comes to food items without realizing how different they in fact are. Thanks much to Ginger for pointing this out to me! The brand to look out for is the Promasa yellow corn flour.

JennaG The Hijabi TT I think we so use to saying corn meal and it’s really flour. First time I made them I used corn meal because all the recipes said corn meal not flour lol

Hey Jenna, we melt the margarine in the microwave to make it easier to combine and also add a bit of vegetable oil (makes the "dough" so smooth). And you know what kicks that "cornmeal" up a notch? A couple boullion (spelling?) cubes or some other seasoning packet! Delish! We use foil when all the fig leaves are done and we still have pastelles to finish make, in fact we double foil it so that no water / little water gets inside during boiling. Hi deary it's ok you can you what ever you are comfortable using to your convenience, a lot of people use foil or fig leaf, I use what is available, not every year I get my hands on good leaves, sometimes they burst, it's okay, seasons greetings

Corn flour is more finely ground and the corn meal so more coarsely ground... if you actually look at the Promasa pack it says yellow corn flour not cornmeal... we just use cornmeal as the general term... for pastelles you want the smooth finish so corn flour is better

Why do you people keep saying cornmeal when the actual ingredient you are using is indeed corn flour? I’ve followed along with Natasha’s recipe for pastelle as well and it did not turn out right due to the incorrect ingredient listed. I thought I was going to come here for something better. Disappointed.

Ginger Grant both are basically the same thing, one is just a finer grain than the other. Both can be used to make pastelles, the texture of it would just be a bit different depending on which is used but would taste the same.

You are very much correct! It is indeed yellow corn flour that’s best for Pastelle making. Cornmeal and corn flour differ greatly in texture. I think however we tend to not realize our language sometimes when it comes to food items and we use words interchangeably... eg most trinis say butter when they are really referring to margarine etc (myself included sometimes)... but thanks so much for bringing this to light. Definitely something I need to keep in mind for future videos. I’ll put a note in my comment section and adjust in the ingredients section.

This pastelle is definitely not traditional. It needs more spices and where's the fig leaf wrapping?. You are not showcasing a true trini pastelle. I'm a dissapointed fan.

Definitely agree it isn’t the traditional way. I prefer fig leaf wrapped pastelles. However I did make mention of that in the video. This is to show a way of making it without the fig leaves. Once I get my hands on some leaves I’ll do a video with it.
