Trini Sponge Fruit Cake / Fruit Cake Slice / Vanilla Sponge Cake - Episode 2212

This recipe on its own without the fruits makes a great vanilla sponge cake.
1 cup soft butter
1 cup sugar - or to your preference
3 small eggs
1 tsp vanilla
3/4 cup milk or fruit juice
1/4 tsp cake spice or cinnamon, nutmeg and a pinch of clove
2 cups all-purpose flour
2 level tsp baking powder
1 cup holiday fruits / Glazed fruits / mixed peel and cherry

i made it today. with apples. it is really good. i chopped the apples i had in the kitchen - about 300g actually (chopped, no peal) I added all of it to the mix. I thought it was gonna be too much, but - no!! The cake is divine!!!

Mix the fruits with some flour until well coated then, add it to the cake batter. Prevents it from sinking to the bottom.
