Sometime we take this "we doh catah" thing too far. You not going to lose your Trini authenticity by speaking proper English when dealing with people from other parts of the world. Sometimes you have to compromise and meet the world half-way in order to be understood and not be considered a ignorant person. Even Sprangalang tones it down (and he is an old Naps boy so he very eloquent) or explains the jargon when dealing with foreign people. Being understood is more important than, "keeping it real". If you not understood you don't COUNT, what you say doesn't COUNT. They already looking at our dark skin and Caribbean nationality and assuming we uneducated, it's good to shock them with some Queen's English sometimes, which when we master it, plus add our little unique inflection and colorful turn of phrase is quite an impressive thing to hear. We speak it better than even the Americans or British do.

that may be then but the average trini now looks for anything fast and easy to handle so there is a variety of things which can be purchased like you said from roast bake, fry bake and sada with shark, saltfish, alloo, baighan and many other fillings to the doubles, alloo pies sahina ect. This is now what most person seek to purchase as street food but they are just the basics. There are a lot more trini street foods that can be added to the list. As we say here variety is the spice of life BTW we love love all the variety of old and new condiments which can vary from location to location.

The vendor stall where they got the doubles from (The Green Shed) isn't really known for their doubles. They seem to specialize more in saheena, baiganee, and aloo pie. Their doubles are far from their best dish.

The real Bhaigini is with split peas flour over bhaigan ( aubergine). Not an aloo pie filled w bhaigan. There's a white truck n the middle of the Southern Main Road, Curepe on weekends. Their Saheena and Bhaigini are A+

Doubles, the official breakfast food? What happened to bol jol and bake?? I am surprised that for one of Trinidad's top chefs that she would say such a thing. I thought that Bol Jol and Bake was the top breakfast dish that you would find Trinidadians making on a weekend for breakfast with avocado pears and sliced boil eggs. That is what you will find even at most Trinidad brunches abroad. I was in Trinidad for 1 month and did not even see a doubles stand.

It is sad that some people only know to insult people when they speak. First of all you insult me by telling me to "sit down and shut up". It surely tells me what type of person you are. Secondly, you assume that I am a foreigner. I was born, bred and educated in Trinidad. When I lived at home that was one of the national breakfast dishes. I live in North America and we still serve it at all of our T&T brunches and I mean public brunches. Trinidad's population has changed drastically since I left and the style of eating has also changed. Doubles was not as popular and easily bought by the public when I left Trinidad. I was on vacation and I was not served any local dishes at the B&B where I stayed. If I wanted to purchase doubles, I was told that I would have to go to St. James very early in the morning. It would be nice if you would learn to be more courteous with your language. You might benefit from it. I don't know what the parents of today are teaching their children. People like you seem to think that being obnoxious to others is a feather in your cap. She said that doubles is the official breakfast food in Trinidad. I am quite sure that with the exception of Indians that other people do not prepare doubles for breakfast, they may buy it, but not prepare it, then I would call it the official breakfast food. I did have bol jol and black pudding at a few friends.

This is the most inaccurate review ever. For starters it look like this girl dont know how any of these things are actually made..sahina is made with baji not callaloo..the pies are NOT stuffed afterwards with the filling.. it is fried with the potatoe or egg plants inside of it.. and lastly, SWEETSAUCE IS NOT FOR DOUBLES. A lot of people do use dasheen bush and she referred to filling as Channa and sauces. She did mention the potato and melongene being cooked with the fritter.
