I watched this video in hospital with covid. I couldn’t wait to get home to cook it….. I had a best friend growing up who’s mother would cook this for me. I must say everyone who ate this along with your macaroni pie said is was to die for and not one drop was left over. Covid took my taste and smell from me so as soon as I get my senses back!!!! Nice thanks. I like to add tomatoes in my stew chicken, it thickens the sauce and gives it a different flavour. I love my stew chicken with a lot of different side dishes such as rice, provision, with pigeon peas etc.

I am Haitian, we always clean our meat with lime, salt, and vinegar, and hot boil water. If it is season food, clean the same way but with cold water

Thank you much. My dear mum passed back in September 2019 and growing up she used to cook this every week, along with curry chicken or goat, macaroni pie, rice and peas, and the roti! When she became sick, I learnt a few of these recipes, but it was never with the same colour. Hence why I've checked out your video, looking for a specifically Trini recipe. Now I understand properly how she used the ketchup and soy sauce, and I remember the sugar also!...Ah the memories, thank you so so much. The only other thing I need reminding of is the macaroni pie and the roti, where she did this trick with the butter to keep it soft. Do you know what I mean? Thanks again, my wife will be very happy when I surprise her with this.

Quick question Ria, what is the difference between adding the seasoning ingredients separately ( each ingredient minced separately) vs blended green seasoning. I notice in other videos you add blended green seasoning to curries but in this video for stew chicken its different. Great recipe by the way !!!!!! :)

Always based on what I have available at the time. If I have blended green seasoning I will use that. However, for stewed chicken I like chopped seasonings--just a personal preference.

I am diabetic, and I would love to make this delicious dish. I was wondering can I still have the same results if I omit the brown sugar and ketchup? Or can you suggest something else that give me the same color and unique flavor?

Iriz Perez You May Omit the ketchup and reduce the sugar by half. Won’t be as dark but you will still get that unique ‘stew flavor’! There is something called roucou which is used in place of the sugar but I am sure it will be difficult to find. Haven’t seen it in ages!

Crushed ginger ok-just a little. Don’t use tomato paste-too acidic.. instead of fresh tomato you can use a little ketchup.

Meats are left to marinate in green seasoning at minimum 2 hrs at maximum 8 hrs in the fridge.

That liquid from American chicken is from them pumping it with broth or sodium solutions to make the meat last longer :/. Makes you miss home, I bet.
