I'm glad you like geneaology too! I absolutely love digging into my family history and I wish I had more time to do it! We have a family recipe for a Hummingbird cake. My mom used to make it all the time and that would make us very happy!

I wish I had my great grandmother's recipe, my mom did at one point but she said it never tasted quite like her's and it was either the love or an ingredient was left out. @@RobynOnTheFarm Hummingbird Cake (GJ’s recipe) 3 Cup (C) AP flour 2 C sugar 1 tsp baking soda 1 tsp salt 1 tsp cinnamon 1 C oil 1-1/2 t vanilla extract 1 - 8 oz. can crushed pineapple, undrained 1 C chopped nuts (we use pecans, we’re from the South!) 2 C chopped or mashed bananas Cream Cheese icing (recipe below) Combine first 5 ingredients in a large mixing bowl; add eggs and oil, stirring until dry ingredients are moistened. DO NOT BEAT! Stir in vanilla pineapple, and 1 C pecans, and bananas. Spoon batter into 3 greased and floured 9” round cake pans. Bake at 350 f for 25 - 30 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans and cool completely before icing. Cream Cheese Icing: 1 8 oz. package cream cheese, softened ½ C butter, softened 1 -16 oz. package powdered sugar, sifted 1 tsp. vanilla extract ½ chopped pecans (sprinkle on top of iced cake) Combine cream cheese and butter, beating until smooth. Add powdered sugar and vanilla beat until light and fluffy. Makes enough frosting for this cake. Spread icing between layers and on top and sides of cake; then sprinkle ½ C chopped pecans on top.

This looks delicious, I love hummingbird cake and I love the liners. I’m going to take some of my liners to the mountains to make a few loaves and put them in the freezer for Christmas gifts. Thanks for the recipe! Printing it out now

That is a wonderful plan, start putting them away in the freezer because it’s going to be December 25th before we know it! @ yes he ‘s better, he has follow up appointment tomorrow on the way to the mountains. Cooking in the mountains with a fire burning is awesome. I’ve got to get moving because I’m doing Thanksgiving dinner and Christmas along with gifts. Busy time. I’ll send our view from the back deck on email this weekend

just made and it's cooling, used the liner and it just came right out, smells oh so good, i cut my pineapple chunks in half and in half again so will disperse throughout bread, i'll lyk how it turned out, smells so delicous!

@@RobynOnTheFarm yes very delicious, i baked for 65 min, did the toothpicik test it came our clean, but the middle isn't done. think i should may be put foil on top so doesn't get to brown or use less liquid from pineapple. i used a glass loaf pan

Wow, that was a big time difference from mine. Could be the oven or could be the loaf pan? Or maybe the liquid...hmmm. I'm glad it tasted good!! The ends are my favorite, too. The crust on quick breads is sweet and delicious!

Yes but altogether, if that makes sense! I spooned pineapple to the 1/2 c line and then poured the juice from the can in to the 1/2 c line in the same measuring cup. Clear as mud? Haha. Just put as much in as you want!

Yes! I filled up about 1/2 c with chunks then poured the juice to the 1/2 c line. Crushed pineapple works too, maybe even better, I just have a lot of chunks in my pantry to get through so that’s what I normally use!
