I have made sourdough many times the labor intensive way. This recipe looks so much easier. At what stage could I add other ingredients such as garlic, cheese, herbs, olives etc?

Hi Robyn, I am new to your channel. I received my Christmas present yesterday...a bread machine. The very first bread I made was this cinnamon rasin bread. I have a Neretva machine. Anyway, it only has one mixing paddle. The bread came out dense and most of the rasins were on the bottom and the top of the bread, almost non existent in the middle. I figure it was due to habing only one mixing paddle. I was a commercial baker for ten years in my thirties. I figure I may need to take the bread out of my mixer after the first rise, knock it down, and knead the raisins in, also would you recommend adding a little more oil and honey? The bread tasted good and I did coat my rasins with the 2 tbsp cinnamon like the recipe said. Just wanted to ask you if you think this is a better alternative than baking it on the bread pan? Love your videos, i want to make several of your recipies. Kind regards Jackalyn ❤

Hi Jackalyn! Thanks for being here and trying this recipe. I have made this in my single-paddled bread machines, too, and mine turns out well that way, too. I'm more inclined to suggest that if you try this recipe again in the future, add a bit less flour than this time or increase the liquids just a bit. Usually denseness is caused by too much flour. You want it to err on the almost too wet/sticky than too dry/dense, if that makes sense. This cinammon raisin bread is denser than my other yeast breads, and that is just the nature of this bread. It could also be caused by not using fresh yeast. I just realized you said you were a commercial baker so you know these things! Also, I have used many bread machines over the years and some bake lighter, fluffier bread, and some bake denser, harder bread...so I'd suggest making a plain yeast bread and see how that comes out. I love to use my bread machine dough cycle and bake my bread in the oven, I get lighter, softer, fluffier bread that way, so yes, I'd definitely recommend trying this recipe using the dough cycle (you could add your mixins at the beep or after the dough cycle is complete when you knock your dough down and shape it into a loaf). I sure hope all this helps you in some way. You are going to absolutely love using your new bread machine! That was a fantastic Christmas present! Let me know if you have any more questions Jackalyn. Thank you so much for your response. I just made a honey wheat bread and I took it out of the machine after the first rise, knocked it down and kneaded a little to shape the loaf. I did the final proof on my counter then baked it. It looks fantastic. So I am going to do your bread recipe again (after we finish off the first one), the next one I will do the same thing as this whole wheat bread. Thanks so very much for your reply. I would have scrapped that fat out. I Iike 93 percent lean beef. I would imagine that would work well with taco seasoning too.

So if you do the bulk fermentation for 12 hours can it be on the counter or it should always be in the fridge?

You can leave it out on the counter for up to 12 hours during the bulk ferment. Be sure to cover it with plastic wrap so it doesn’t dry out if you’re leaving it out that long! After the bulk ferment you can shape it and throw it in the fridge overnight if you’re not ready to bake it yet. I hope that helps! Let me know if you have anymore questions!

THANK YOU SO MUCH, ROBYN!!! I got a flour mill and wheat berries for Christmas, and so far, everything I have made has not been very good. I went on You Tube and have been watching a lot of videos, but have not been too impressed with instructions. I rain across this video last night and decided to follow your recipe today. I followed the instructions to a tea, except I made my bread in the bread maker and it is PERFECT!!! I am so excited to have found a “bread maker bestie” on you tube. I cannot wait to go back and catch up on your other videos. Again….thank you SO MUCH!!!!!😊😊

My bread turned out beautiful but a little thick and tough to cut on the bottom. It also did not rise as high as I thought it would or split open like yours. Wish I could post a Pic so you could evaluate it for me. Do you have any advice for the next loaf?

We love sourdough in our house! Your five hour loaf looks lovely and delicious and I can’t wait to try it. I keep our starter in the fridge and bake with it weekly, so I am wondering if I can use my unfed, cold starter for this recipe? Or should I let it come to room temperature first? You can use your starter right out of the fridge! You may want to let it bulk ferment a bit longer than the 3 hours that I do, but this recipe is so forgiving that it probably won't matter much. Thank you for watching and for your kind words!

I made this bread yesterday so we could have it with turkey noodle soup. My 17-year-old, who normally prefers crackers with his soups, tried this bread and put the crackers away. Today, we had leftovers, and he immediately asked for 2 big slices of bread. And when he realized the bread was almost gone, he asked me to make more. And I did. He told me that he liked all the breads I have made in the past but this is his favorite. This recipe is really easy and delicious. Thank you for sharing this recipe.

Hi Teri! Thank you for your question! I usually just wipe them out and add about a Tbsp of oil and rub it all over the inside and outside. If I’ve made cinnamon bread or something sticky, I wash them with hot water and dawn dish soap, dry really well, and re-oil. That’s it! They’re easy to care for and very durable! Hi Robyn! I just made your recipe but I used my bread machine on the cake cycle. It came out perfectly! It’s so good I’m having difficulty not eating the entire loaf in one sitting. How can i keep the bottom crust from baking so hard? Would i need to adjust the temp, or maybe put a cookie sheet under my dutch oven? Its so hard, it hurts our teeth! (Probably cause we're older now.)

Great question! You can put a cookie sheet under the Dutch oven, add about a cup of uncooked rice to the bottom of the Dutch oven (you can put the bread directly on top or use parchment paper), or add about 2 Tbsp of oil to the ingredients to get a bit softer crust. Haha, no, I buy it as an emergency food, but it’s also good to rotate through your foods so they don’t go bad and also so you know how to use them and if you like them so you know what to stock! This does make an easy meal when you’re in a hurry, too.

Look good except for all the grease you poured over the top. Much to messy, and really not needed. The grease is probably not to healthy either. Just a thought.

The oven temps seem mixed up on the instructions.

Hi Debbie! I just double checked and the instructions are correct. Bake this loaf at 450 degrees with the top on then reduce to 425 degrees with the top off to brown the top. I hope that helps!

How do you keep parchment paper from sticking to the bottom?

It sticks a bit while it’s raw, but once it’s baked it doesn’t stick at all! You can also just oil the bottom of your Dutch oven well and skip the parchment paper if you’d like.

@ I’ve used it a few times & when baking with it it bakes into the bread. I have a round silicone sling, but think I need one for my rectangular ones or just keep putting them in loaf pans.

@@angelaaneff445 Maybe try dusting the parchment with flour or cornmeal to keep that from happening. I often just well-oil my loaf pan or dutch oven and skip the parchment paper.

Yes! You can and cover the loaf pan with another loaf pan (and bake the same as these directions), or open bake it in a loaf pan at 375 degrees for about 40 minutes or until browned to your liking.
