I went to American BBQ cooking class last week and this might sound blasphemous to the Americans out there but instead of water, the teacher said to put a knob of butter and half a beer in the crutch. I plan on trying it in a kettle cooker soon. But thanks for the video, starting out with BBQ and I like seeing the short form versions while I'm testing methods and rubs, etc. Wagyu Brisket is available at the butcher near me too so might try both! sending thanks from Sydney

Looks good, I like Worcestershire sauce on meat before cooking. Looks really good. HEB is my store here in San Antonio so I'll be looking for that prime brisket as soon as my Weber Summit Charcoal grill arrives in the coming week or so. Keep up the great work.

T-Roy, thanks for sharing. Nice to know that a brisket can be done on the Weber Kettle. Sure, not the cooker of choice for a brisket, but you showed it can be done. I don't recall you tasting a smoke flavor in your taste sample. Would you have added more wood chunks at the beginning to try and get the smoke flavor more pronounced? Not sure how you get a "crisp" bark when its been STEAMED (wrapped) … but if you say so. Concerning run, *Oakridge Black Ops Brisket Rub* is perhaps the best. That, along with *Everglades All-Purpose Seasoning.*

Since I have a Weber Kettle (with charcoal rails to contain it in certain spots down on the grate) and also a PBC, do you think a Slow 'N Sear is necessary? I hear a lot of good things about them but since they cost the same as the Kettle I'm not sure they'd add much to the party. I am curious about a Vortex, though, seems it would enhance what the Kettle is best at. And you need to do more PBC videos! ;-)

Southern Coastal Cooking ™ yes you definitely can use cold water, but it makes sense not to heat sink the internal temp of the cooker like that.

Hi T-Roy! I used to have an 18" kettle (an off brand, not weber) and now I have a 22" weber kettle. The 18" non-weber grate was much higher above the coals than the 22"weber. The grate of the 22" weber I have is much closer to the coals . Have you noticed anything like this? Do you suppose I might be incorrectly setting up the 22"? Thank you T-Roy

that looks amazing, i bet it taste better / i would like to make suggestion . if time allows . brine your meat for 12 to 24 hours . in pineapple juice and cranberry juice. in a brine u can add anything u want . even the kitchen sink . loll chopped onions garlic oranges salt pepper sugar light brown sugar and so on . i guarantee u get a smoke ring and tons of flavor. as for procedure . it works great . why not try to revers it . give it steam bath in the foil then . roast it off with the smoke . cooking in foil or as i learned in parchment paper is a old technyce . damn my spelling sucks . as for market trim . u trim it your self . u can melt that fat into tallow . good to start a fire . however im very impressed with ; your the man

Used all the information I learned from TRoy to do a 7 lb brisket flat today on my 18 1/2 in Webber using the SnS Charcoal basket for my grill. It doesn't have a water pan so I just used a disposable aluminum pan filled with water. Pulled it at 212 degrees after 6 hours at 300-325 degrees. It was awesome. Get a brisket point. It's usually around 5 pound when trimmed down and is fabulously tender and juicy.

Yeah, that's what I usually do, but I was following the instuctions that came with the SnS.

I always thought the low and slow was to help breakdown the connective tissues and collagen in the meat. If you hit the meat with high temperatures, like you would in the oven at say 350 F the meat would become very tough and hard to eat. I know a lot of people are using hot and fast now, so why does it not become tough when cooking it this way?

It is a little tougher when cooking Hot & Fast, but if you cook it to around 200F internal, it will be tender. I don't know if you noticed, but when I was cutting the slices, you could see how the fat between the flat and point got rendered out pretty well. I'm sure wrapping the brisket helped break down the tissues and collagen too. Thanks for watching!

Why is this called 5 hr brisket? And did you not get a bark ont he bottom because you did not put a rub on the bottom? I did not see you do that. Looks good though.
