She is called "Sir" because she was knighted by the queen and as head of the hellsing Family/Order you were traditionally "Sir Hellsing". Maybe the japanese author didnt know that female knights were adressed as "Dame". The Hellsing Family in that anime is even a knight order with the single goal to kill Vampires and other supernatural threats in the prostestant area that is great Britian in the name of the english crown. Also: you totally talked over and missed the "keep reading or I shoot the other testicle" line and others which is why you kept asking what they are talking about i presume xD

And many of the jokes are setup for things about to happens. One of the jokes you completely missed was the hookers joke. When the exchange between Alucard and Integra began, she said they had guests coming. Alucard: "Are they hookers?" Integra: "They're our financial suppliers." Then 2 1/2 minutes later we get Integra's meeting with the financial suppliers. Integra: Entertainment? Supplier: Quite, like in my report. $20,000 for a Candy. Supplier #2: That's Candi with an I by the way. Candi is a hooker.
