@@MargauxNeedler quite a lot actually. The type of flour, the egg, the cooking process all plays a large role in the dish. Biang biang noodles arent egg noodles like pasta is. Can I suggest something for Without a Recipe? More Mexican foods: sopes, gorditas, chalupas, tamales, duros, aguas frescas. They're not super hard and they're easily customizable, so they're perfect for showcasing your personalities. I don't think you have to worry about people coming after you for lack of authenticity if you don't try to pass them off as traditional, like Rachel Ray did with her pozole.

I'm a Chinese person from Xi'an. Biang biang noodles is one of my favorite dishes growing up! "Biang" is actually a made-up word specifically for naming that dish. It is a VERY difficult word to write with an insane number of strokes and a complicated structure. There is even a proverb that specifically teaches you the steps to write this word. The bang bang guy's hand-pulling looks legit, and I'm sure it must be so tasty, but you'll NEVER find raw cabbage on top of biang biang noodles in China. Some common, more traditional toppings are diced pork stir-fried with soy sauce, stir-fried tomatoes and eggs, tofu, pak choi, and chives. You can put a sauce, or you can heat up some oil and pour it over the noodles for a finish - the oil should sizzle when touching the noodles, and uh it tastes so freaking good. And omg the name Zach gave to his dish had me dead - there is another Chinese noodle dish from Sichuan that's ACTUALLY called "dan dan noodles". It's hand-cut thin noodles in a bone broth with a mildly spicy and sour flavor. The noodles do not make "dan dan" noises in any part of the making process though lol. It's called "dan dan" because it was used to be sold on the street carried on a shoulder pole - called bian dan, or dan, in Chinese. It was amazing and so much fun seeing you guys tossing weird stuff on top of "noodles" that absolutely did not biang 😂 Looking forward to more!
