I can't imagine a kitchen without fines herbs. Sadly, herbs de Provence has taken over its popularity and they are next-to-impossible to find in grocery stores. Fines herbs are so good in so many dishes ... eggs, fish, soft cheeses. People always ask, "What did you put in this?" They are as classic as Audrey Hepburn . . . Beautiful, elegant dish. Thanks for sharing.

The alcohol is fully evaporated, if that's the problem you have. If you really can't do it, chicken stock (very little), water, even citrus juice (lemon, I guess) is an option. Red and white wine vinegar as well.
