From a current BK employee stand point, I can tell you that the goopy congealed white stuff is mayonaise that has gotten too warm from the hot chicken being placed on it. However, if its a clear and white watery fluid, especially on the original (long) chicken sandwich, it's just from picking the chicken up from the fryer basket with tongs- the tongs poke a hole in it sometimes and "chicken juice runs out".
