In this episode, we tried incredible Goan food for the first time in New York City. One of our favorite things to do is find regional Indian food and the chef at Cardamom Indian Cuisine is from Goa!! But that's not where it ends... his grandparents spent their whole lives in Goa and he is using their recipes!! We are in for an authentic Goan treat!! As always, we hope you enjoy our Indian food reaction!!

@@FollowMeImaFoodieIndia - I traveled with the Eagles on their Hotel California tour, Fleetwood Mac, and cooked for folks like Robin Williams and Heather Locklear back in the day when I was in L.A. I then spent the past 25 years in Honolulu running Hawaii Food Tours. Now in Oklahoma. Crazy, right?

I am from Goa. I love your videos and your passion for taking the high road of food adventure crossing boarders. It’s absolutely beautiful watching both of you cherishing it! Growing up, traditional Goan food has been fish curry, prawn curry, and/or a side of some veggies with par boiled rice. Goan food is about flavor , not about spice/heat (aside from the abmotik). If you visit Goa, the hospitality is something you will enjoy alongside sitting by a beach and enjoy the traditional food from a shack :). You are the best!

That's such a colorful array of dishes! Love the way you guys are trying food from each part of India, instead of only doing the tandoori and butter chicken-naan mukbangs like most people do. You take the trouble to display the wide variety of Indian cuisine through these adventurous food vlogs. Try to do food from the Eastern side... Bengali, Oriya. It's very different and not so spicy. Then the north eastern cuisine (seven sisters states) would be another outing altogether! Then there's Kashmiri, Rajasthani, Avadhi, Gujarati, Marathi... the list is endless.

Trust me guys you will be surprised by the flavours and freshness of food in India . Just make sure you go to right place . The real Indian food you will get on street or small restaurants. Best of luck guys , always loved watching your videos

Goan Vindalho can be prepared with pork and beef . And we Goans prepare mutton xacutti too. But naan is north Indian flat bread. Goa is famous for goan Paõ (bread) and poli. Caldeen is prepared with fish and cauliflower too but not chicken . That is each ones choice .Nowadays people try different food fusions and make all confusions 😃

That was probably our fault. We asked them to make us a fish, shrimp, chicken, goat and lamb dish. We wanted it to be diversified, but we should have left it completely up to the chef!!

Go to Goa guys....just go! Vindaloo is a mix of vinager, garlic and the meet sleeps for 24 hours there. Remember guys, Portugal have Goa for 500 years, so Goa is a India state with a large influence from Portugal...a big salute from Portugal, love you guys!!

Visit Goa between December and February. Stay close the beaches and enjoy seafood at the numerous beach shanties. Canacona, Vagator….god I miss Goa.

The chef is a Allwyn Godinho a friend of mine (I’m a New Yorker also in the food business) and I did speak to Allwyn a couple of days ago telling him how I had come across a clog featuring his biryani (by the same folks) and he told me that they had shot a second video featuring his Goan dishes. So here it is .. Good job Allwyn , may your restaurant prosper and keep cooking like you always do- and hey, as promised , I’ll drop in some time when I’m in Sunnyside Queens

The reason Goan food is so different from other Indian cuisines is because of the Portuguese influence. Vasco de Gama arrived in India about a handful of years after Columbus failed to reach India and ended up in the Caribbean islands. Old Vasco hopped down the western coast of Africa, and then up on the eastern shores, fighting and killing Africans (and later Indians), until he finally met someone who could pilot his ships to India. I'm not a fan of his. Later Portuguese arrivals settled in the Goa region and didn't leave again until the mid 1980s when the Indian Army, Navy, and Air Force arrived on the borders of Goa, crossed the borders, and made a strong suggestion that they return India to Indians. Many Goans left for Portugal and other western countries. Until then Goa had its own mail system and stamps, as well as currency, and cuisine, while claiming some allegiance to Portugal still. My paternal grandfather was of Portuguese heritage whose great great (great?) grandfather joined the British East India Company's Army around 1800. I have not yet been able to figure out if he came directly from Portugal or from Goa. I hope that helps explain the differences in flavors. Your palates might have reacted to the slight affinity to European flavor influences and choices. I believe Goans rely more on vinegar in their cooking, as a souring agent, than other Indian cuisines do. Indians tend to prefer tamarind and citrus more often. I'm sure there are other differences too.

It was a beautiful mixture of flavors!! Our affinity for seafood definitely played a role in our love of the food!! However, the chicken dish was my favorite so it went much further than our love of shrimp and fish!!

After all, I was one year old when that happened. :) I actually had meant to say that Portugal didn't recognize India's sovereignty over Goa until the mid '70s, but I got even that decade wrong. Lol! Thanks for correcting me. I find it interesting that the word "Dude" is not only still in use after some 7 or 8 decades, but that it has spread to India as well, along with the term "Bro", which is still around after 6 decades or so.😄

Kashmiri chili is very mild. Not too spicy. Balchow has vinegar a very important part of Goan cuisine. Naan is certainly not part of Goan cuisine but very popular now especially with foreign tourists. Pao bread is what they use in goa. Goa is the right place to start your Indian journey. Vindaloo is a Portuguese influence in goa which means wine and garlic. Vinegar is used instead of wine. Pork is the original meat ysed for Vindaloo.

That’s not Kashmiri Chilli. It is byadgi chilli used extensively in south of India

Is byadgi spicier, because I always thought Kashmiri was very mild.

@@FollowMeImaFoodieIndia Yes, basically there are three types of dried red chillies: Guntur Byadgi Kashmiri Guntur is the hottest followed by byadgi. Kashmiri chilli gives red bright colour to the dish but is milder as it is grow in colder climate of Kashmir( Himalayan ) Whereas Guntur and Byadgi are grown in hotter climate down south. They also add character and taste to the dish!

Yes, that was a clove. :) Star anise is about the same color as the clove, but is shaped like a starfish and is about the size of a nickle or dime.

Joy is absolutely a quick study in terms of eating with fingers! Most Indian cuisines will have cardamom, clove, ginger, garlic, red chillies/green chillies, cocanut, star anise, fenugreek, cilantro etc in various proportions

As someone of Goan ancestry, I'm glad you tried Goan food, although there are going to be differences between what you get in NYC and what you get in Goa. Here's my two cents. For the balchao, you seem to have footage of the chef preparing something. In reality, the prawns should have been sitting in a jar for weeks or months pickling. This is why this dish is popular during the monsoons, as are all pickled and dried fish because you don't get any fish, including prawns. For the fish curry, the actual fish itself does impart its own flavour. Mahi mahi is not used in Goa, so obviously, the end dish will taste a bit different. Naans are 100% not Goan. It would be better to use a nice dinner roll, as bread is very common in Goa. Do not get naan with any Goan meal. What was the meat in the vindalho? In Goa, it has to be pork. While we do like thick sauces, those looked a little bit too thick compared to what I've normally experienced. Xacuti is usually only made from three things - chicken, duck or mushroom, definitely not goat. And you were right about the star anis. Finally, the caldinho - maybe chicken caldinho is made, but the most popular version of this dish is made with shrimp/prawn or fish. All that being said, I hope that you got to taste little bit of the Goan spice blends and methods of preparation. You'll either have to go to Goa or to a Goan home to try the real stuff!

I have a feeling a lot of what you just mentioned was our fault. We asked for chicken, shrimp, fish, lamb and goat for diversity. Our hope was that it would make the video more interesting. Unfortunately, we probably handcuffed the chef with our request. As far as the naan goes... you will never find an Indian restaurant in the US without naan. LOL. We are obsessed with it!!

@@FollowMeImaFoodieIndia Well, I can't blame you guys if the restaurant is offering those choices - their menu should have been better designed. For example, you just wouldn't see goat vindalho on a menu in a restaurant in Goa. You would not see naan in a restaurant that only made Goan food, as you need a tandoor to make naan, and tandoori cooking is from northern India. I understand though that the restaurant only has a few Goan dishes and offers mostly the usual restaurant fare. I looked at their menu, and it seems to be a bit like what you would find in the UK - choose some kind of curry and any protein you want is added to it. But this is not how Indian cooking is. Certain curries are only made with certain proteins. For example, rogan josh is only made with lamb. The spices would not match with fish or shrimp. Even fish curries are made with particular fish as some sauces go better with oily fish e.g. ambotik - a sour and spicy curry from Goa is often made with shark or squid. Until you get to Goa, if you want to try Goan food, my best suggestion is to make it yourself. You can easily get the ingredients in most Indian grocery stores and you can also find recipes on KZbin and various blogs. Enjoy your food adventures!

You guys really rock. Goan food is generally eaten with rice and / or pao. While in Goa, try Goa sausages, sorpotel and bebinca. Chad and Joy, I love to see you guys devouring the food. For biriyanis and kebabs you must visit the heavens of those in Lucknow and Hyderabad......you will be blown away, trust me. Stay blessed.

I recommend you to try Goan sweet items like Dodol, Sarna, Coconut sweet cake, Goan bowl and Babanca cake and also Goan chorisaos, Rose omlets and vindalo masala meats gravy or dry and many more traditional Goan dishes too.

Sooo all that you eat with Goan food is mostly Tamarind and Vinegar to balance the spice. Goan food comes from the Portuguese Sailors, they ruled Goa for 450yrs and even after India got it freedom in 1947, State Goa was freed in 1961. The Portuguese were sailors that sailed from Portugal to India for months and the only way to preserve meat was by Vinegar, and Goa has plenty of Coconuts so Coconut Vinegar is easy to find. The Xacutti is also a coconut ground with roasted spice to a fine paste. The onions that are used in prep all these Goan gravy based are usually thrown into fire to get them coals flavored and caramelized with its own liquid. Traditionally, food was cooked in clay pots on wood fire. Therefore the process of throwing the onions into the fire was easier to pre cook them for a pasty base. There is Mackerel fish ( calvas fumandas) that are cooked like the onions as well… Pickling is another form of preserving meat and fish during the rainy season. That’s the time, when fishing is off season. We let the fish breed in monsoon and the rains make rough seas.

Goa should be on your to do list if you ever visit India for sure. You may want to see if you can visit someone's house and have food made at home... Restos are great but home food is more awesome.. places like - Curlys in Anjuna are a must.. arambol and other places to speak off .. it's just so much to explore for you foodies .. One of the reason could be that Goans are not much in hyping up and marketing their cusine aggressively. They are more of laid back folks who enjoy their life at their own pace. If you get a chance to visit Goa, you should try the place Ritz for some Goan food.

Goa is a must for anyone visiting India. The flavors in Goa is a mix of Portuguese, Goan (local) and Konkani recipes. Coconut is abundant along the coast and Konkani foods hve a lot of coconut mixed into them. The weather in the period Oct - Mar is absolutely fantastic and beaches are awesome! suggest you try Goan cuisine in GOA.

I've never eaten goan food in Goa but whenever I've eaten any Goan dish in other parts of the country, I found it spicy, specially one of the famous dishes called Vindaloo. Tasty+hot 🔥 I always plan for Goa for some vacation and everytime it gets cancelled. This video is a reminder for tha 😂

A Tip for eating with your fingers is to put one or both elbows on the Table . Yes , it is discouraged in the West but it makes eating with your fingers much more easier and comfortable . When in Rome do as Romans do 😊
