if i hazard a guess, i think "kinako" is the japanese equivalent of "injeolmi"! it's also often used in japanese sweets, like a sweet soybean powder ☺

Yep. Kinako is a soy bean powder Japanese version. I think the second macaron shop incorporated a lot more Japanese ingredients: ‘white miso’ and ‘cherry blossom’ flavours are definitely Japan-centric.

This series on my home ground gives me life!! Ollie please keep up with the Macron jokes, it makes me forget the critical political situation we’re in. Gabie is so right when she says she hates fruit + chocolate combinations, the only one that gets a pass is pear + chocolate (it’s called Poire Belle Hélène for those who would not know about it) A few precisions: Mogador is a theater and lemon in French is citron. The powder on the chocolate covered raspberry macaron must have been piment d’Espelette from the Basque Country. It pairs well with the chocolate. Finally, it’s quite surprising you preferred Ladurée over Pierre Hermé as the first one is mostly known to be overpriced and overrated. Looking forward to the rest!

Would love to hear why! Was that last red box the Pierre Herme ones? I was in Paris last month but ran out of time to try Laduree. I did try some Pierre Herme and I loved how they were not too sweet (I don’t usually like macarons cause they are too sweet). Hopefully one day in the future I will get to!
