In case that you don't have anchovies/kelp, you can use just a half spoon of chicken stock or beef stock. And add a little soy bean source. Garlic is an option. But green onion is must. I suggest you boil rice cake (ttokk) in water to make it soft while you prepare the vegetables and source. It will save you time by having the source absorbed into rice cake.

@@bukkadadda it’s meant to be a bit fermented too, look up the best brands to buy. More inferior brands will be more sweet than fermented but no, none of them will be spicy in the way you’re expecting. It’s an aged, fermented flavour. Gochugaru is also not spicy like you will be expecting (I’m from west Africa I understand you lololol) but think of it like a more flavourful paprika, you can add a lot to dishes and it gives a nice smoky, slightly spicy kick but it will not be hot. They are very tasty in their own way though, you just have to appreciate them for something other than spicy heat.

As a Korean, you shouldn't put garlic at all but put more sugar and 물엿 (korean starch syrup)
@afghanistananies
@afghanistananies 8 ай бұрын
No way - adding minced garlic was absolutely a correct choice. He probably sweetened it to his taste (maybe not shown in this clip - but you only need a tablespoon max) and you don’t need any syrup unless you want a non-drip sticky sauce like for rice cake skewers. I don’t enjoy most restaurant tteokbokki bc of how super sweet they make it. Also soup tteokbokki ftw (국물 떡뽁이)

Gochugaru means hot pepper flakes in korean. The difference between gochgaru and the shiny flakes is way of grinding peppers. Shiny flakes (called 'gulg-eun gochugaru' in korean) have a bigger particle than gochugaru. ('gulg-eun means thicker)when you're cooking tteokboki, gochgaru makes the sauce hotter with gochujang. the thicker particle, gulg-eun gochugaru helps tteokboki look nicer and tastier.

As a Korean, I GASPED. The smile did not leave my face throughout the video. Now I get how everyone else has felt watching their countries showcased. You have to be a good cook because the end result was very authentic-looking! I agree with the other comments on adding fish cake and eggs, though, plus ramen noodles can elevate the dish again to another level. So glad to hear you liked it ❤
