I'm glad you're visiting the Philippines. It's got its warts just like any other country but we truly have some of the most beautiful beaches and islands in the world. And in the North mountainous areas that are pretty cool too. It's underdeveloped in terms of infrastructure so its a little rougher to travel to.

Tapa is partially air dried and or smoked almost like a ham then marinated. It was ancient traveller's food. It would at least last 3 days without spoiling - more if they dried the meat longer.

In terms of food, the taste will vary with every restaurant or vendors. One tapsilog or sisig doesnt reflect all of the tapsilog and sisig in the country so better try them in every restaurant .🥰 enjoy your stay here.🎉

Bagoong is used sparingly, it's salty. It's to make the kare kare more tasteful because it's a little bland on its own

The Philippines does the best pork dishes. Adobo... Sisig...Lechon. Regarding the dipping sauce, it is very common in Philippine cuisine to have a vinegar-based (usually sugar cane or coconut vinegar) dipping sauce to go with any roasted or fried dish. It is mainly to cut the fat or oily feel of the dish in the mouth... and also the sour citrusy taste is refreshing in the tropical heat.

most Filipino food is intended to be eaten with rice, which is why the dishes on their own are seasoned strongly. The rice balance or softens the strong flavors. Tip: if the dish is too salty/sour/sweet/spicy, just add more rice to your spoon to water down the strong flavor.

Shrimp paste is used to balance the taste. If you put too much much it'll be over powering the other taste.

The 1st disgh you compared to cambodian dish looks like Tapsilog. The small dish is Dilis.

Next time try to look for these dishes and try it out. beef morcon, embutido, sizzling sisig, sizzling bulalo, beef mechado, pork menudo, beef kaldereta, bulalo, chicken curry, chicken tinola.

the shrimp paste actually acts like salt in kare-kare because the original kare-kare the salt is almost non-existant due to the peanut butter sauce being its major ingredient (not to lose the peanut sauce so to speak)

Regarding the Kare kare peanut sauce dish. It’s cooked that it lacks saltiness therefore you need to add the fermented shrimp paste. Not a lot but each spoon full with rice you should add a little to each bite. 😂. You don’t add or mix shrimp paste to a full plate all at once. Just add a spoon full on the side of your dish to add a to each spoonful each time.

There's a lot of variants of sisig. That chewy piece you ate would be cartilage from the pigs ear. Some sisig doesn't add pigs ear or the cartilage part. If you want to try some good sisig, try to go to a restaurant called Manam and try their sisig or a restaurant called Locavore and try their oyster sisig.

Great video. Make sure to order rice for every meal. In the philippines, rice is not a side dish. Its always a part of the main meal. Most times, It doesn't come with the dishes because most eatery in PH are family style dining. But you're ALWAYS expected to order it. Eating adobo, lechon, kare kare, even lumpia or any filipino dish without rice that doesnt have bread or noodles is like eating indian curry without rice or naan. or eating spaghetti sauce without pasta. Its weird and not enjoyable. Even soups are eaten with rice in PH. Rice is life.

Thats also why most of our foods are strongly flavored, because you have the rice to balance it out. And also, try sisig in a better place. Thats horrible sisig. I can tell just by the look of it. it looked like the sisig I ate in my high school cafeteria. Any sisig thats not served on a sizzling plate is bad sisig. Try the sisig in Gerry's grill, its a filipino chain restaurant but its a good starting point. We also have a big 'dipping culture'. We love dipping 'dry' foods in either soy sauce w/ chilli and calamansi, vinegar w/ chilli or fish sauce w/ chilli and calamansi. Enjoy!

This is right on!! Everything should be eaten with RICE. That's the why kare kare with shrimp paste wasnt the best for you guys. Rice is necessary to balance flavors. It's like eating sandwiches and not eating with the bread

Sisig is a Filipino dish made from pork jowl and ears, pork belly, and chicken liver, which is usually seasoned with calamansi, onions, and chili peppers

Filipino taste palette is alway on the bold side hence there are a lot of dish and condiments here in the Philippines that are on the strong side of flavors like bagoong. Fermented food contributes a lot with filipino culture and i got to admit its really an acquired taste but once your able to figure out how they are actually being used and the dishes they are being use with you will see that it actually make sence. For example the kare kare it really taste good with that peanut sauce its smooth and really blends well with the meat but given the filipino taste a lot of us tasted it as a little on a bland side so we use bagoong add more saltiness and a little more depth to the flavore. also kare kare is usually a fatty dish grease from the meat and the peanuts making some people that unable to finish the dish, by adding bagoong in every other bite helps to cut through the fattynes and keep you eating more.

12:41 see there, the meat pieces who has this thin white line between them? This is pigs ear.. The ones without that are pigs face.. At least you had a traditional one, a lot of people do it with regular meat now.. But the difference in texture is part of the experienced of the dish :) So that was a plus for the minus that you had no sizzling plate.. Thats also why you got a normal egg, otherwise it would have been just the egg fresh out of the shell that just cooks with the rest heat while mixing it :) And really, after or along a few bears, it is really perfect :) 14:25 Thats true.. Can you guess why? The AC.. :) So it really is the best place to meet up, because some family might not have an AC or saving the money for having the AC run of full power in a full (and often small and badly isolated) house :) Better spend the money on a drink or just sit around.. So it really became the go-to place in the Philippines.. In some countries they are now slowly closing everywhere, I dont think that will happen in the Philippines.. 15:57 it has a long history, back to the spain of course.. because San Miguel you can also get in Spain, but it is a seperate company since very very long ago.. But now also try the Red Horse.. The beer the filipinos drink when they want to get hammered ;)

TAP-SI-LOG = TAPa (beef) SInangag (garlic fried rice) itLOG (egg) ; SILOG meals would be anything served with garlic fried rice and fried egg... LONG-SILOG = longganisa (native filipino sausage) + SILOG; TOCI-LOG = Tocino (Glazed Pork) + SILOG; etc....

The shrimp paste is not a dish but is used as a condiment or sauce to the dish you are eating with rice. Yes, it is an acquired taste. I use it only on some dishes.

wow, i would call that a food trip vlog. at least you tried a few of the top best pinoy dishes. if you're still in the south, try chicken inasal from a local eatery not from Mang Inasal restaurant. another dish is Sinigang, either pork, fish or shrimp. and try some bread from the local bakery, like pandesal, pan-de-coco, etc.

For the sisig you suppose to put the lemon(calamansi) direct to the pork then mix it not together with a rice xD I imagine the rice taste sour and it is weird xD

..and the citrus that you tasted is most probably CALAMANSI, a small round native lime, that is also good to have as sa juice (sort of a lemonade) on hot/warm days.

Before you eat a filpino food the first thing u guys must do is to reseach about a dish…ok… u must learn first the culture when u know the culture u will easily firgure it out why the food is like that how they cooked it etc.. and there is a certain food for a certain region.. again learn the culture…. There are better sisig than that. It should be on a hot plate on its own with egg on top. It was Anthony Bourdain favorite when he went to Philippines.

Sisig should be eaten in good restaurants because there are cheaper versions that are not that good, made mostly of fat

That Sisig wasn't done right the pieces are too big you should give it another shot in a restaurant that specializes in it like Gerry's grill. It is supposed to be crispy not chewy.
