Ladies you are the best !!! I tried making my own JUST EGG just like you did in your previous video for veganuary ! Omg! It is soooo good! One thing I did learn is to make sure the pan is hot enough after adding vegan butter and that way the mix will bind so well ! And I was able to flip it “ like a pancake “ it was so light and fluffy and delicious!!!

Lasagna is life! Almost every year my mom would let me make the most boujee lasagna for my day meal. Now they are vegan but still dang delicious and satisfying. I'm gunna be making it next week as it's now on the meal plan. Lol

Next time you make this try salting the eggplant and zucchini first and just brush off the liquid/brine. Helps a lot. Or you could bake the veggies on a low heat around 200 degrees and just keep on eye on it so it doesn't roast, though roasting might add some extra flavor. Also also, I would of wilted the spinach with the other veggies, helps with reduction.
