딸기와 요거트 생크림으로 상큼한 크레이프 케이크를 만들었어요~
크레이프도 3가지 색으로 그라데이션 되도록 쌓으니 훨씬 색감이 예쁜 것 같아요.
건조 딸기를 믹서기에 갈아 크레이프 반죽에 넣고 딸기 다이스는 요거트 생크림에 섞어 샌드 하니 딸기 향이 정말 가득가득한 케이크랍니다.
윗면에도 예쁜 딸기를 듬뿍 올려 더 먹음직스럽게 완성된 것 같아요.
케이크 겉면은 핑크색의 크림으로 마무리해서 사랑스러운 느낌이 나네요~
확실히 요거트 생크림이라서 맛이 더 풍성하고 상큼해서 과일과 잘 어울리는 것 같아요.

▶재료
달걀 4개
설탕 50g
소금 1g
바닐라익스트랙 3g
박력분 210g
딸기가루 10g
우유 500g
녹인 무염버터 70g
식용색소
생크림 450g
설탕 30g
요거트파우더 50g
건조 딸기 다이스 10g
생크림 150g
설탕 15g
딸기
▶레시피
1. 달걀에 설탕, 소금, 바닐라익스트랙을 넣고 섞은 뒤 박력분과 딸기가루를 체 쳐 넣고 우유 100g 정도를 넣고 섞는다.
2. 남은 우유를 모두 넣고 섞고 녹인 무염버터를 넣고 섞은 뒤 식용색소를 넣어 색을 내고 체에 걸러 냉장실에서 30분 정도 숙성한다.
3. 약불에 달군 팬에 반죽을 얇게 부어 펴고 익히다가 기포가 올라오기 시작하면 뒤집어 살짝 더 익힌 뒤 팬에서 꺼낸다.
4. 반복해 구워 총 5장을 굽고 남은 반죽에 식용색소를 넣고 섞어 더 진한색의 반죽을 만들어 5장을 더 굽고 더 진한 색으로 5장을 더 굽는다.
5. 식힌 뒤 15cm 틀로 자른다.
6. 차가운 생크림에 설탕과 요거트 파우더를 넣고 뿔이 설때까지 휘핑하고 건조 딸기 다이스를 넣고 섞는다.
7. 제일 진한색의 크레이프 부터 순서대로 크림을 발라 쌓고 옆면의 크림을 정리한 뒤 냉장실에 넣어 둔다.
8. 차가운 생크림에 설탕과 식용색소를 넣고 휘핑해 핑크색의 크림을 만들고 케이크 겉면에 전체적으로 매끄럽게 바른다.
9. 남은 크림을 짤주머니에 담아 케이크 위에 짜고 가운데 딸기를 올려 마무리한다.

500g Milk
70g Melted unsalted butter
Food coloring
450g Heavy cream
30g Sugar
50g Yogurt powder
10g Dried strawberry dice
