▷Ingredients
■Cocoa Mille Crepe Dough
2 whole eggs
35 g unsalted butter, melted
35 g sugar
65 g cake flour
10 g cocoa powder
250 ml milk
5 ml rum (option)
▷How to make
1. Add melted unsalted butter, sugar, flour and cocoa powder (sifted) to the whole egg mixture and mix well.
2. Add the milk and rum and mix well. Strain the mixture so that no lumps remain in the dough, and refrigerate for 1 hour or until chilled.
3. Mix mille crepe batter to make it uniform. Heat a frying pan, lightly oil it, roll out the dough and bake it on both sides. 14 to 16 pieces can be baked.
4. Cut the baked dough into 15 cm dia. pieces.
■Chocolate cream
80 g sweet chocolate
80 g milk
350 ml heavy cream
15 g sugar
5. melt the sweet chocolate in a saucepan of simmering water, add the milk and mix. Remove from the water bath and allow to cool.
6. Add the sugar to the cream and beat until no large bubbles remain. Add the chocolate cream and beat to a consistency that is easy to spread.
7. Alternate layers of crepe and chocolate cream.
8. If you want to decorate with the extra cream, squeeze out the crepe onto a piece of plastic wrap in the desired shape and refrigerate.
■Chocolate ganache
70 g sweet chocolate
50 ml heavy cream
9. Melt the sweet chocolate in a pan of simmering water, add the cream and stir.
10. Pour the ganache over the cooled mille crepe. Decorate with squeezed cream and pistachios.
