the stems containing lots of holes from the yum gai wan are actually water lily stems. you can have them if you travel to a lake in Phatthalung province called Thale Noi where the farmers pluck the stems linking to the blooming flowers to cook. i had the water lily stems cooked in a spicy and sour soup at Thale Noi during my trip in late January.
