Hey Bart, great recipe! My wife and I made some pan seared (sustainable!) scallops+tilapia fillet with oven roasted vegetables and a butter lemon sauce. We decided we should make today a Fishy Friday! Needless to say, you came up in the dinner conversation, as well as the Food Revolution day. Cheers! Great that this is sustainable way to fish for tuna! My question is whether the fishermen can make a good living with this method or not, It doesn't look like they can catch large volumes (which is good for the fish and for humans to enjoy fish for the future), but are the fishermen satisfied with their profits?

***** That's only because in America/Europe the fish often has to travel thousands of miles over a course of several days, switching hands many many times, allowing bacteria and parasites time to proliferate. Thus, the US government requires that sushi grade fish be frozen for at least 168 hours, to slow bacterial growth and to kill parasites...BUT an exception is made for tuna! We can be so confident that tuna is not dangerous raw, that it isn't even necessary to freeze. Tuna is not known for being a common carrier of parasites, and skip-jack is particularly safe in terms of extremely low parasite frequencies and mercury content.

Louis DelValle Nope, the law is created to prevent catching animals other than tuna (like dolphins), plus, they can brand the tuna as 'sustainable' and sell it for a higher price.
