I don't recall how long it took to crust up. Maybe 2 hours? I do recall it was about 5 hours in the oven phase to make it fall-off-the-bone tender I'll be at TLH again at the Houston Lifestock and Rodeo contest this year cooking on David Welch's Firecraft BBQ team for the Waste Management company in late Feb

I suggest you smoke first. Once you have bark and smoke, move to oven until fall apart tender

Another great cook Harry. The rub clumps up on me here in Maryland and I put it into a small herb processor, problem solved. A BBQ amateur tip, when my rubs get to the bottom portion of the container I put them into the herb processor and mix them together for a cook. Always interesting and flavorful. Which reminds me I need to purchase another container of your chicken rub.

Hey Coach, if it's one thing that stood out to me about the Houston video. . . other than your buddy paying extra for a no wait table and some good looking turkey was the amount of adult beverages he must have had right before filming. We weren't drinking at all soooooo, that's not relevant. I was honestly nervous about being in the video. We didn't pay extra for the table, we made a reservation which requires a $100 deposit in advance. I'm glad that my nervous inhibitions were amusing to you. Harry can attest to the fact that no drinking took place. In fact I don't believe that he drinks at all. I've never seen him indulge in any libations. Thanks by the way for embarrassing me and my wife on Harry's KZbin channel. I don't understand why people just can't be kind to one another.

My friend n i hv been wanting to go back since right after we went. Its kinda of pricey so if i can come close to theirs making my own i can make w he did for the same price of one leg at the Hut.

Harry I was thinking about what you said about Turkey skin, and I have experienced thick rubbery Turkey skin. But I have also had some amazing Turkey skin as well. The best was definitely a fried Turkey. I do think the skin on the legs may be the toughest. Anyways, at thanksgiving there’s always a couple of us waiting for a piece of skin from the breast meat area. I wonder if the boiling water trick would work on legs?

You had me until you switched the way you baked the legs and didn’t show what you did. You went from wrapping them individually to showing them all together in a pan of chicken broth 🤦🏾♂️

I left it in foil pan in 275F oven covered until falling off bone tender. You can also use a Instapot or crock pot also. Moist heat will make it very tender

Turkey legs are fine. I like puoltry thighs the best. All of them quail to goose. I shoot my turkey with a bow. Smoke a elk steak. Real good . I don’t eat moose or bear.
