The “twice under-knot”... btw... is a surgeon’s knot. Speaking as a doctor who sews up both turkeys and humans. It’s nice because it holds the threads together so you have time to set the top-knot. Handy thing, that.

Question about Kale: I recently made stuffed acorn squash with sausage and kale. The kale had a very over-powering bitter taste. Does kale from the garden get more bitter in the cooler weather? During the summer it wasn’t as bitter.

Look delicious. But be aware, while watching the video, you never say how long to roast the turkey roulade. After the video, I first went to the comments, but then I clicked on "show more" on the video description and found the recipe for it and how long to cook it. But watching the video, I got confused and said... "But how long do you cook it?" And you never said. Just a tip for your future videos. Done leave out important step information like that.

Wiping your fingers with a dish cloth was not very good after touching raw turkey. You touched too many things afterwards. I love your videos.
