If you're looking for a piece of Turkey to smoke that will turn out juicy, delicious, and beautiful, give the Thighs a try. Here I smoke a pair of Turkey Thighs on the Weber Kettle using the Slow n Sear and some Pecan Wood. A simple seasoning marinade and some maple barbecue sauce glaze gave these Turkey Thighs amazing flavor and color.
Seasoning Mixture
1 tsp Thyme
1 tsp Granulated Garlic
1 tsp Dried Rosemary
1/2 tsp Celery Salt
1 tsp Coarse Salt
1 tsp Coarse Black Pepper
2 TBSP Olive Oil

Man I absolutely LOVE grilling Turkey Thighs, so I can't believe I hadn't thought of smoking them yet. I'll be doing it next time though, that's for sure. Great glazes and seasonings, as always. Copper Kettles RULE!

I watched it. I make them. They loved them. My parent's 42nd anniversary will be memorable, and for me, next year's 5th of may will be the 1st anniversary of my first time smoking anything. Awesome teacher Ry! This video is timeless.

Those look delicious. I cook turkey thighs all year around when I can get them. They are a great summer meal from the smoker/grill.

With turkey/chicken i like to take the thighs/drumsticks to 170-180F primary for the texture, I find at 165 the meat to be a tad bit chewy. The dark meat can handle anothe le 10-15 degrees without drying out especially if you brine it.

Hi, any thoughts on pan searing the thighs to a golden color before smoking them? maybe help with avoiding rubbery turkey skin but also for those on pellet smokers that might not get the color of stick burners or charcoal

Great looking bird. Incidentally, have you done any/intend to do any tinkering with goose? At a glance, the going rate in these parts for one seems to be roughly equivalent to buying a whole chicken, whole duck, and maybe a whole turkey combined---which begs the question...

In my area I haven't seen any good sources for goose, other than the occasional frozen one that seems like it's been in the back of the butcher's freezer case since 1997. But I'd like to give it a try if I could find a good source :)

Grocery store had a deal on whole turkeys, this year betweeny fam and my sisters fam meeting up for thanksgiving i did the turkey she did ham and she suggested only buying a turkey breast.. well i took off the dark meat and did the breast for thanksgiving but have the 2 legs thighs,drumettes and wings so 8 pieces total. Brined em all together and decided ill smoke the limbs. My sister and mom are crazy, they prefer the light breast meat regardless of how many times i tell them the dark meat is better. Sam with chicken.
