it is a very well known Sham desert (Palestine, Syria Lebanon and Jordan).. some prepare it without semolina which I think is tastier.. it is also usually prepared with baking powder rather than yeast to make it more like a cookie.. I was first introduced to it by a Palestinian friend as part of their heritage and culture which is why I thought you choosed this dish to support Palestine and send them a prayer .. I must say I am a bit disappointed you didn't...

Other then shaping it’s not so challenging. You can also share however you want, maybe shaping the filling as a log on top of a thicker dough and roll ones

Wonderful recipe.! We have something similar out here in Malta called “Maqrut” but the pastry is fried in oil! Love to try this one but two spice ingredients are not available “gum mastic” and the “mahalep powder”. Can I still make the cookies without these two ingredients spices? Merhaba Aysenur! These cookies look so delicious and festive! I’d love to add these to my Christmas dessert platter. Just not sure I can find all the spices. Fennel, cardamom, and cinnamon are the only ones familiar. There is a Middle Eastern grocery a few miles from here that may carry them. Otherwise maybe Amazon has them. ❤

for a very soft cookie dough, I prefer to roll it and put it in the fridge until the dough a little bit firmer. then cut the dough with thread.

So strange you choose a time for making middle east cookie and underlined your friendship and unity with levantine region via cuisine...same religion and cuisine does not make people automatically right... . Turkish cuisine shares a lot with Greece and Georgia as ancient lands of current Turkye, but you have never mentioned "friendship".
