hi Aaron, thanks for the recipe. In South Asia we make a similar dish with chickpea flour instead of AP. It makes for a more savory flavor. Usually it has a bit more batter and is deep fried. People make it on rainy days and festivals just like jeon

If you don’t want to spend hours on cutting carrots and potatoes just use a grater, it works fine with a german kind of potato pancake called kartoffelpuffer.

Been making a version of this for years . . . DELICIOUS! Two things: you can use almost any veggie you have in your refrigerator, like leftover cabbage. Or buy a bag of shredded coleslaw mix, toss in onions or whatever because the matchstick slicing takes forever. The dip I make is with just soy sauce and rice wine vinegar w toasted sesame seeds. Simpler. Yummie.

This is definitely right up my alley, everything about the chives, green onions, carrots and chilis is just heavenly combination. And the sauce too! Claire’s suggestion for the Korean Rice white wine combo is interesting. Not shying away from that for sure.

Very simple, easy and delicious thank you Aaron for the great recipes. Quick tip: If you want both sides to be crispy, add a bit of oil on the other side before flipping otherwise I found the other side sort of gets grilled and isn’t as crispy.

The best way to find out is to try it yourself. If I would add any meat, I would fry it first to be sure it’s well cooked and then add it to the mixture.

You could probably get away with a rice or chick pea flour. It's honestly only there as an ingredient to bind. Maybe append an egg to the batter recipe to make sure it binds proper? Might have to experiment a bit, but that definitely seems doable.
