You could put the mirepoix in a food processor with olive oil and process into a paste to avoid the water and sauté instead.

Over 20 years ago I use to frequent a small Restaurant owned by 2 women in Santa Cruz, CA. They were all about soups and chili and I think it was all vegetarian. Anyway they put out a small paperback book of soups they served in their restaurant and my absolute favorite was the think Tuscan blended White bean soup. It was amazing. Lost the book and have been searching for a similar recipe. I can’t wait to try this. Great video.

I fell in love with this channel quickly not even a month or 2 ago. It reminds me of the cooking shows I watched when i was a teenager, the stuff you might find on tv on a sunday morning. no silly music or fast jump cuts, just a laid back guy with a chill voice and great presentation. I used to LOVE cooking but have kind of fallen out of it in the last 7 yrs. Its a channel like this that has me thinking about getting back into it. I still enjoy a challenging recipe the likes of thomas keller but these are fantastic and great recipes for getting back into the swing of things! Thanks a bunch!

Hey CJ, I'm a college student in a dorm. I really love your videos and make all the ones I can with the limited stuff I have (living on the sixth floor and getting a skillet + supplies down to the second -- not fun). I'm saving a bunch of your recipes for next year when I have a real place with a kitchen. Not sure where I'm going with this, I guess it's just really nice to have a resource like this for a cooking-deprived person like me. When I want to cook but can't it's nice to go on a Food Wishes binge and bookmark a bunch of great recipes -- like this one! Basically, keep being awesome :^)

This is honestly my favorite soup. It's cheap and delicious, especially since I took your advice and planted myself a lil windowsill herb garden. It's even good unblended! Also especially tasty with a bit of diced up ham. 😌❤️

+heghineh It's the way we start our curries here in the subcontinent. Onions, garlic and ginger are ground into a paste and then fried off. Spices are added along with some water to prevent burning and then, after cooking for a few minutes, the meat or vegetables are added.

Delicious and foolproof soup! Croutons are delicious, i once made this without celery for a friend who can’t stand it, and just added more carrot. It was great. Normally I do use celery and also add a French shallot.

Hello! I just made this yesterday! I had to make some substitutions.. I used drained chilli beans instead, and cumin & curry instead of the herbs bc I didn't have them. For the veggies, I had carrots, bell pepper, onion, & garlic. It smelt great while cooking! I even blended them in the food processor like you, but with olive oil. Idk why, I just did it that way. Also boiled some potatoes in chicken broth, and added that to the veggies and beans. After it was blended smoothly, I added cilantro, pepper, and ground ginger. It gave it a fresh spicy flavor. Anyway, it was a hit at dinner so thanks for sharing your amazing recipes! Can't wait to cook your garlic parm chicken wings for this weekends Alabama vs. Auburn game! I am literally SO ready!

I just made this and it is delicious! I used home cooked navy beans, and used the water they cooked in instead of broth, but next time I think I will use broth. The croutons really put it over the top. Thanks for a great recipe!

Thank you Chef John for this recipe. I'm making it for the 2nd time today. Bean Soup is an all time fave of mine. However, I'm finding that the finished product from this particular recipe comes out very thin. I'll continue making it as it's much simpler than soaking the beans overnight but my personal opinion is that using 3 cans of beans would work much better yielding a thicker soup. Just this cook's opinion.

Made this today ! My 1st time making broth and soup ever and croutons and buying parmeggian and it was legendary ! i discovered perfect peper! Its cheaper to buy uncooked beans. Sprout them by soaking them. Then simmer them over low heat

I've been blending onions and garlic to use just like this, and I swear it makes the flavors so much more intense! I forget every time though that blending one onion is like chopping a dozen. My eyes!!

Hi Chef John, huge fan here. Have you ever considered making another channel where you show your face some more and maybe talk about cooking in general and yourself some more. The masses would love it. Also, quick food wish: Cuban breaded steak/bistec empanizado.

Maybe.. But please make it another channel. The reason I love these videos is that they cut to the chase. No 'look at me', no BS, just cooking. And fun. A lot of other people's recipe videos have my finger hovering over the fast forward button. Never these ones. They are beautifully made little films, and have been, all the way from the start. That's a real talent, IMO.

This is BRILLIANT! Not only do you get the taste of the veggies by doing it this way, but you don't have to put up with the annoying textures of said veggies! :D Would this technique also work with the 'holy trinity' of cajun cooking? For example, like in a gumbo? I'd be very interested to see how that turns out if you're willing to attempt it here. :D That's my food wish.

we make a big 32 lite bucket of a celery onion carrot and garlic puree as the base for our soups at my workplace (as well as for our marinara and meat sauce)
