Olive oil isn't exactly the best finish

Very bad for a food surface. Walnut would be optimal IME

Yes, olive oil is non curing and as a vegetable oil it can go rancid over time. To use a non curing oil, mineral oil is a better choice. It will not go rancid. Of course it evaporates (slowly) and needs to be reapplied frequently to provide any protection. A heat treated walnut oil like Mahoney's Walnut oil actually "dries". It's food safe and won't go rancid.

Я уже на этот Кнауф плотностью 25-30 кг на куб смотреть не могу. Плотность должна быть в стенах от 50 кг на куб

#2 - DO NOT USE OLIVE OIL ON WOOD, IT DOES NOT CURE AND WILL GO RANCID. YOU NEED TO USE EITHER A "CURING" OIL FINISH LIKE LINSEEED OR MINERAL OIL THAT WILL NOT GO RANCID FROM BACTERIA. yes caps, because this is important - NEVER use a "food" type oil on wood. NEVER.
