Great video, in order to get my daughter to eat greens, I added pacific clams to your recipes. Now I have no problems in getting her to eat kai lan /baby kai lan and as pacific clams are pretty pricey, I sometimes use prawns with the tail on...taste great too :)

To me, the best Chinese restaurant is the SUN WAH.It is located in the North side of Chicago at Broadway and Argyle (on Broadway). I have been visiting this restaurant for around 30 years. I was watching when they take out the Gailan flowers, they don't use them in the food. I did ask to the owner what is the reason for that, the owner told me: because in the flowers is a big concentration of insecticides. Incredible, this is to take care of customers and...attention to details...bravo Sun Wah, I love that !!!

Gai lan was my favorite veggie to beat, best eaten along fried and sauced dishes like salt and pepper ribs. Also with zi char dishes like salted egg prawns. I had oyster sauce with dried scallops I bet it'll make this more decadent.

Hi Anishka. You don’t have to blanch the veg first in the second method. That makes it so much more convenient which is why we prefer the second method - great lazy way out to a plate of yummy veg. Happy cooking!

Hi Jahstice. You can replace oyster sauce with mushroom sauce. It looks like oyster sauce except that it’s made with mushrooms. Tastes almost the same too. As for fish sauce, you can use light soy sauce instead. Hope this helps. Happy cooking!

Are you able to heat up the oil and then pour it over the chopped garlic? That will help to increase the fragrance of the garlic. After that, you can just add the rest of the ingredients in. As for water, use hot water so that it can melt the sugar. Hope this helps.

I have this issue whenever I cook Kailan vegetables. After cooking, there's always a kind of taste which we find it strange. It's a bit bitter and tastes somehow like chemicals. I tried various types of kailan, both locally grown or from Hong Kong. Most give the same weird taste after cooking, even the ones from Hong Kong. Those from China are the worst. However organic Kailan tastes fine with no such strange aftertaste. Someone told me it's due to the pesticides used on these vegetables. But I always wash my vegetables with salt or baking soda to get rid of those harmful pesticides and dirt. So I cannot fathom why Kailan and sometimes certain vegetable species have such strange bitter and chemical-like taste after cooking. I reckon the source of the vegetables is important? Can anyone here enlighten me?

I have been attending the Sun Wah restaurant for more than 40 years which is located in the North side area of Chicago, Broadway and Argyle, on Broadway.
