So, Years ago, even before we started Keto, we stopped buying Peanut Butter because we had to buy it in Merida to get a big enough jar to last us, and High Fructose Corn Sugar plus the preservatives were always a problem for us. In my local Municipal Market, there is a stand that sells shelled peanuts for $5.00 USD for 2 Kilos of shelled peanuts, raw. We take them home, toast them fresh in the oven, cool and into the Cuisinart they go. Affordable, Delicious and sugar free! Had not considered Pecan Butter. Think I will try both. Thanks. Love the Shirt!!

For great pecan butter- I found toasting the pecans first - then let let them sit 10 min or so to cool (a little) does 2 things: brings out natural sweetness of the nut so I dont have to add additional sweetener (and that's saying alot b/c I like sweet) AND I dont need to use much or any additional oil to make it into nut butter. I am using a vitamix, but I still had to troublrshoot to get the nut butter consistency.

FYI - this pecan butter is for some upcoming recipes. If I were making it to eat on crackers or some other delivery mechanism, I would toast the pecans in the oven, then add some sort of sweetener and a dash of cinnamon when making the nut butter.

When I do pecan butter, I roast them first. It brings out the natural oils. And let me tell you what, it taests like pecan pie, no salt, no sweetener, and it is so smooth and creamy.

I made a pecan/walnut/coconut/almond butter. A big batch, I thought, but it did not last! I sprouted the nuts overnight and dehydrated for over 24 hours at 125F. Then I toasted about 1/4 of the nuts to give it some toasted flavor AND most of the good nutrition of the sprouted, raw nuts. I do have a Blendtec, but not the Twister Jar, so I just scraped and added melted coconut oil until it all got moving in solution. Given I used unrefined coconut oil, it set up nicely in the fridge overnight and then reached a really good spreadable texture at room temperature thereafter. Going to try pecan/walnut/hazelnut/brazil nut/coconut butter next. ^_^ Do you still make nut butters and if so, what do you add for sweetness/flavoring? Also, I have a Wildside blender jar. Do you think it would work better for nut butter than the traditional square jar?

Yes, I still do nut butters. I've only used the Twister Jar. I don't ever add anything for additional sweetness. Anyhow, the mixture you describe here sounds delicious!

I have a Vitamix, but it's too difficult to get stuff out; this looks easier. Pistachios are sadly one of the carbier nuts. :(

I love the idea of using MCT oil, but is it necessary to add oil at all? I've usually made mine by allowing the food processor to run until the nuts produce their own, and the final product tends to be less grainy. But, again, I do love the idea of using MCT!

Generally, I use my Blendtec blender, so no oil is required in that -- and it produces a creamy (almost fluffy) nut butter. Not everyone has a $300+ dollar blender, though, so I wanted to show that it could still be done on a beat up, 20 year old food processor. That little bit of oil certainly helps with my food processor, but yours is likely newer and in better shape.

I just tried my hand at my very first batch of pecan butter, Wowza it's amazingggg! I didn't even have to add oil since they were still slightly warm they blended beautifully!(roasted them @350 for like 8 minutes and let cool maybe 5 then straight into the processor and added a pinch of salt and dash of cinnamon, that's it!)😋 Hopefully it lasts a few days haha I came across a HUGE sale on diamond chopped hazlenuts a couple months back (.38/ 4oz. pack at Ollie's!) I bought like 10, used a few while attempting to recreate a Nutella mock and was severely disappointed (Sooo bitter and too thick😔) have you delved further into the possibility of attempting to make a keto version of Nutella yet? I'm All ears, I have a ton of hazlenuts waiting to be used on something delicious & the Nutella cravings are a beast at times.. I'd like to feed that monster 🤣

Could you use coco nut oil? I just discovered zucchini noodles, softened in butter and minced garlic and then mixed with some grated Parmesan cheese, very easy and cheap to do virtually no carbs. You could eat with meat or a fried egg.

I would think that would be fine, though it might alter the taste a bit. I think coconut oil would be a better compliment to the pecans than to the pistachios.

I honestly try to avoid other people's recipes unless I'm totally stuck. I find I come up with more creative stuff that way. If I do wind up basing a recipe off of someone else's stuff, I always give credit though. Also, I can't stand websites that make me scroll through eight screens of BS and ads to get to a recipe (not sure if hers is like that).

Based on my experience with the Blendtec, I believe the Vitamix will be faster and will give you a smoother texture than using a food processor.

Salt to me is a personal taste thing. If it were me, I'd go start with 1/4 tsp of salt for 12 oz and then see if you want more. Just remember when seasoning, you can always add more but you can't take away. The shirt came from 6dollarshirts.com

I didn't roast them because I wanted to see how they would behave in a couple of recipe ideas I have. If I were eating the pecan butter straight up, I would roast them and season with a little sweetener, salt, and cinnamon. At least that's how I would do it.

Are you asking if I personally can or if anyone can? If the question is "can anyone?", the answer is "yes, the same way I did the pecans". Just be aware that walnuts, like pecans, have a high amount of tannin. You'll want to add something to balance that in terms of a sweetener and/or other seasoning.

Kick it up a notch with Alton Brown's wok-fried peanut butter method. Lots of flavor add-ins and toasty flavors to be had. Going to use this method to make a nut butter of a blend of unsalted nuts I found at Winco. 2 carbs for a 1/4 cup and it has almost every nut under the sun.
