Guac should be simple: Avocado, salt, lime juice, pickled jalapenos, a dash of the jalapeno brine. Top with diced tomatoes. Done. No cilantro, onions, mango, almonds, garlic, cumin, etc. I can see a little red onion in it but not too much. Definitely no spices of any kind or nuts of any kind.

Love your cooking and you're so informative. I make my guacamole the same as your 1st recipe but wasn't aware of pickling the onion in the lime juice, great tip. I also add fresh garlic, Himalayan pink salt & ground peppercorn medley. Another trick I learned is if you're not going to eat it right away, put an avocado seed in the guacamole & cover with the plastic wrap as you showed. Love the 2nd guacamole too which I'm going to try.

To avoid to oxidi the guacamole you can put olive oil or the avocado seed in the middle and your plastic also is valid. If you peel the avocado and haven't mash it you can put it in a bowl of water and the avocado seed. Trick I learned in Colombia ;)

I hated it too until I had it tableside at a restaurant. Then, I just copied what they did. I use the ingredients in the first batch but I add granulated garlic and finely diced jalapeno, however. I put the lime juice in the bowl and finish with some on top, a smaller onion, and less cilantro and have never thought it was too acidic, but maybe I am just used to citrus living in Florida.

I definitely just made some guac and it was so good. I never heard of the pickling of the onion. I'll give it a try on my new batch. I don't like it mush.. It has to have chucks of avacado. Diced onions, minced garlic, Serrano pepper, cilantro. Mom's garden tomatoes make the star of mine. I will try brining my onions next time and let you know what I think bud thank you

Bobby --- love you and Art!!! How to tell if an avocado is nice to buy. I have heard that you pop that little stem thing off the end, and if it is green, it is OK. This has worked for me. I have also noticed some of those stems gone on the fruit, so I am not the only one trying this method!!

If you put one or two of the avocado pits (depending on the size of your dish) in the guac it will not brown that day. My friends always request my guacamole, I make in the morning take it to the party and at 10 pm it is still good to go. I am going to use your tip too though 👍
