Thank you for this recipe! I have been looking for vegan alternatives for Ube halaya and this is perfect! I also was hoping to use agave syrup and was thrilled to see that was included! I have made a gluten free version of Ube crinkle cookies, but wanted to make a vegan alternative for family members. The GF Ube cookies are delicious, made with store bought Ube halaya....it has buttermilk in it, so a no-go for some folks. I am blessed to live in a multi-cultural area on the Big Island, I can easily obtain most ingredients!

YES! The original recipe is soooo difficult to stop eating, but always be mindful of the ingredients in what you're eating!

I am happy to come across your channel and i observed that you are using healthier version/ingredients(like coconut oil, coconut sugar) which i do the same. Aga Agnieszka yes you can! It’ll be a little stiffer though if you stick it in the fridge - id day you can omit the oil so it doesn’t soak your cake

I’m not understanding why the consistency is different when it’s in the mason jar vs the tin pan ? How come it stays like a spreads consistency and it hardens when it’s in the pan ? Someone please help

Hi Martine! For this recipe, the Ube halaya solidifies when it’s in colder temp. It also helps that I constantly churn the one in the jar to keep it spreadable while in room temp! If you’re talking about the Ube halaya you can buy in stores, it’s possibly the two different recipes and ways it’s used for. The one in the tin is created so that it can stay in that shape, easy to cut and eat as is. For the one in the jar, it’s for spreading on bread or adding it into another dessert recipe. If you’d like, you can add more liquid to the recipe in the tin to make it more spreadable! I hope this helps? Let me know if I can clarify!
