This is absolutely my favorite sort of video. I like to make the Dashi maki (Japanese omelets) with the funny rectangular pan like at 4:38. It was amazing to see how fast he did it. Also, I had not seen anyone use the bamboo rollers usually used for sushi in that way. It had a cool texture, and he did it so fast. It took me at least twenty tries before I could make one successfully. Thank you for this video, very entertaining.

I’m in the same business as this guy. I once opened a store and I worked 7 months straight without a day off. 14+ hour days every day. By the end I was starting to hallucinating because I was so tired. Mad respectful to you, I don’t know how you do all this work and stay sane

Hello chef, I am gaijin from Oregon. Typical Japanese master. Obsessed with every tiny little detail of his art, but seems laid back and nonchalant about it. It’s always surprise me the quantity of fish and sea food japanese eat. I am in Canada and I don’t even think Canadian eat one fish meal per week. A lot of immigrants does but the native, I don’t think so unless they live in coastal area. But having sashimi’s fresh grade is incredible. Most of our fish are frozen and even the fresh ones sold on the supermarket needs to be cook to be safe.
